    Sweet and Sour Mandarin Fish (松鼠鱼) is one of the signature dishes in Huaiyang cuisine. The surface is crisp and the inside is tender and soft; the sauce is sour and sweet, agreeable to the taste; has fresh and delicious flavor.
    Note: Although carp was used in the namesake recipe, there are a variety of fish that can be prepared this way. One common fish to use is river or sea bass.

      @@elen3638 thanks Bryan, my intentions are simple, my original comment is /was to genuinely complement chef John & his team for the artistic, creative display of his skills in the culinary dimension. People even in western countries in a so called first world countries dont understand metaphors and other English usage of terms, i worked in the hospitality industry from age 16, the skills of chef John are not ordinary they are extra ordinary. Im not flattering him. Im truly spellbound by his skills. At 53 i know what im talking about. Anyways thanks for your great support, blessings.

    Master Chef John Zhang is amazing. His knife skills are awesome. He basically just uses a cleaver for all prepping purposes. Julliene : cleaver, chop : cleaver, debone : cleaver, fillet : cleaver, pair vegetables : cleaver, make garnishments : cleaver.

    I eat a fish prepared like that at Hangzou years ago and it is one of the best fish I ever eat in my life. So tasty. Has we said it France it's gourmand. Thanks for sharing your receipt.

    this used to be my favorite dish growing up, sweet and sour taste perfect for kids and due to the heavy seasoning and knife work the fish didn't have to be very good or fresh and therefore the dish is on the cheap side too.

    One thing.
    The reason you take something out of the oil and then re-fry it isn't to drive off the extra oil. Moisture comes out when you fry(duh, I know) but it also keeps coming out for a short time after it's cooked completely. It's this moisture that makes friend foods go soft quickly. By taking it out a few minutes early and waiting a bit, you allow that moisture to come out and then when you put it back in the oil the moisture in the breader is driven off. Making it crispier, and making the crispiness last longer.
