  • Ketchup-based sweet and sour sauce isn't a novel idea. In fact, the practice originated in China. It all began with someone from somewhere in China, where sweet & sour pork is said to have originated. This person dipped thinly sliced pork with potato starch batter before deep-frying it twice until crispy. The pork is then lightly coated in a sweet and sour sauce made of sugar syrup and rice vinegar. Since then, people have been combining sweet and sour sauce with other ingredients like chicken, fish, and beef, among others. Residents of another province began making their own version of sweet and sour sauce, something thicker and contains ketchup.     Sweet and Sour Fish 糖醋鱼
    Ingredients:
    Serves 4 pax

    Marinated fish

    1.1kg [38.8 oz] fish (we used red snapper fish)
    3 tablespoons water
    1 teaspoon salt
    2 stalks of spring onion (using the stem part only)
    5g sliced young ginger
    Coat the marinated fish all over with cornflour before frying.
    Sweet and sour sauce
    ==================
    5g of chopped young ginger
    3 cloves of chopped garlic
    8 tablespoons tomato ketchup
    280ml [9.47 fl oz] water
    2.5 tablespoons sugar
    100g [3.5 oz] fresh tomatoes
    80g [2.82 oz] pineapple
    60g [2.12 oz] cucumbers
    0.5 teaspoon salt
    6 tablespoons rice vinegar
    Some cornstarch solution

    Thanks for this recipe Roland. I live in the U.S. but I grew up in Korea where my parents still live. Braised fish is a staple (although we do it a bit differently) and this recipe really made me miss my parents (who I haven't seen in nearly 3 years) and their cooking. One of the worst parts about growing older is seeing your own parents growing older too.

    Will it be alright if I use white distilled vinegar? Btw I prefer potato flour because the frying oil will be cleaner compared to cornflour.Thus leftover oil can be used again for other cooking.

      Yes, you can use distilled vinegar or even apple cider if you wish. Potato flour can be use to replace corn flour too.

    Is there a way to fry fish so that it doesn’t splatter as much? I scared of oil splatter 😅

      Hi Ylei, you can coat the fish with flour first to reduce splattering. If the recipe doesn't call for flour, then just dry the fish as much as possible before frying. Hope this helps.
