These were the good old days, I loved watching you back then, you had such passion in everything, now it’s all stars and wine and money, the passion is now green. It’s not the same. God Bless Pasquale. 🇮🇹🙏🏽🇮🇹
This was by far one of the best videos I have watched in a long time. This gentleman is living his authentic genuine self and shares his love of cooking coupled with his rich Italian heritage. Much love and respect!
When I was growing up, I use to watch my Mom, Making all the Ravioli's by hand and a rolling pin & cut them out round with an empty Jelly Glass, Then lay them out on a clean Sheet, to dry a little before cooking them, They were better than any store made ones of today, Etc. Thanks for sharing Pasquale
I have tried pasta maker ravioli attachments, molds, everything. All I needed was to do this. Easy.
Thanks Pasquali!
I love him!!! His voice his patients 👏🏾 there’s love in that food👏🏾👏🏾
That is so cool to see someone make this from scratch. Let alone someone from the old world who carries the original tradition!
I don't remember if I commented on this before, I love watching your videos !! This one almost made me cry. When I was little I was in the kitchen with my mother, two grandmother's, my great aunt and my great-great aunt making home made ravioli. They made it with beef, pork and chicken all mixed together with parmesan, eggs and parsley with spices. My job was to get in the way. I really miss them !!!🥰🥰🥰🥰
I lived in Bari as a kid. I would watch the ladies make ravioli in big sheets, probably 3 feet wide and as long as a picnic table and 4 or 5 ladies would cover and cut all together, such great memories, I miss so much
My Grandma used to make them, my Mom, and now is my turn to make it with my kids !! Grazie Pasquale
Pasquale makes you want to cook again! He is so wonderful! Great job!
You are the best teacher!
Nothing like southern Italian food !
I remember when he was on TV. He was fantastic then and still is! Love you !
Thank you for your video. You learn Is something new on everyone's kitchen. I made noodles tonight I want to make raviola tomorrow. I will use your method. I'm going to free some. Thank you again
The two eggs and water advice made the difference… The dough was perfect for raviolis. They were absolutely delicious l!
Thank You
Tony ( not Kathy)
you do a beautiful job , you remind me of my Dad from the old country . thank you friend
I just ordered a pasta machine and plan to give it a whirl. This video and the one on homemade pasta really helped me feel like I can do this too. For that, thank you. I feel like I could be in any kitchen in Italy and there I'd be standing next to you getting my daily lesson.
This guy is the best ! I trust his recipes. I've learned a lot from watching his videos.
Thanks for making the videos and teaching the world to make pasta!!!
Pascuale, you brought me back to Argentina. Many years ago, when I live there, I saw the Italians making Ravioli this way. Thank you for bringing back good memories. I love pasta or noodles how Argentines called it.
Excellent! I will try it
This as a really nice demonstration, and I will watch it several times over. I’ve never made home-made pasta. I know this is not easy. The only thing, Chef Pasquale, that I wish you had added is HOW you cooked it, because I am told by people who have done it that it is important to simmer it gently, so your ravioli does not come apart and ruin your dish. But thank you very much, a nice honest, detailed instruction.
And he didn’t tell you to salt the water either
Beautiful lesson! Beautiful teacher!
Thank you for shearing knowledge.
Thank you, Chef Pasquale. It's been so long since I made stuffed shells or cheese ravioli that I forgot what to mix in with the ricotta! Thank you for a much-needed 'refresher'! :)
Making some ravioli this week, using your ricotta recipe here. :)

Yum Pasta.
Hallo, very nice ravioli, bat I am not sure is seminola a corn wheat or just durum wheat? Please answer if you are not too busy.
Thank you chef .
Oh yeah baby
I enjoyed this. Keep up with the videos, man!
is that a large tan pastry cloth on table..what should I use? I only have a small cloth for rolling pies.....
Love the accent(reminds me of wonderful days with my grandma and grandpa in Queens,NY), and I highly enjoyed and learned so much from your video. Very informative. I don't have a crank roller, so can I use a rolling pin instead? I am subscribing to your channel. Grazie di cuore
+VengeFulHemi rolling pin can be used but keep in mind the thickness can vary from a machine. Look online or Amazon, they have hand cranked rollers for around $20-30.
Thank you Pasquale Gratzie-perfecto
Great video
Love your show! A person that cooks with passion! How can I get a shirt!
on my imperia pasta roller... that looks like one in your video...#6 is the thickest setting..so I would need to go down to #1....correct?
