    I make 'honey' from lilac flowers. Has a pale pinky hue of colour to it. Beautiful way of studying botanics and turning them into foods, oils and salves.

      ​@batacumba no, but you can make sweet syurp using the fermentation process instead of steeping and boiling as flowers like lilac and violets are delicate and water will remove its properties. You can create the syrup by picking the flowers of the lilac and layering them with sugar in a sealed jar over a couple of months - one layer of flower then a layer of sugar all the way to the top of the jar - i believeits a Japanesemethod as ive seen it also done with sakura cherry blossom. You can also make lilac infused honey using real raw honey and steeping your local flowers in raw honey for a couple of days. Hope you find this helpful.

      Well the idea was to evaporate the excess water from the honey fruit mix unless you want mead in your honey jar. ^^
      Also if you boil down honey even more you can make it very thick and candy-like. Never tried it though but some people on the internet like it.

    Please be careful with hot sugar it can cause really bad burns. It gets hotter than boiling water. (Just a reminder for new cooks or people who havent worked with molten hot sugar before)

      Good advice. Candy making (though this should get to the soft crack at most) is almost as scary as deep frying, in my opinion. And there are some really good chefs who consider home deep-frying too dangerous. It’s not quite as hot, but it’s infinitely stickier and harder to get off.

      Yes, deep frying is dangerous as well. When I was a kid my friend burnt her house down trying to deep fry french fries. Lucky they got out in time.

      Very good advice it's truly painful because it's hotter and because it doesn't cool down fast under the water being stook on the skin transferring heat for priceless milliseconds when you are trying reversing it.

      ​@@ellevictor474because vegan alternatives are mostly there for people who are interested in becoming vegan or are allergic to certain foods and are trying to figure out how to eat without the things they want to get rid of. People who have been vegan for decades usually avoid alternative meats and such unless they're going out to eat because highly processed food is not good for you and also pretty expensive. Basically, they're called "vegan *non vegan product*" in order to make it easier for new vegans to understand what they can replace with a certain food item in their cooking, not because they think it's the exact same thing

    This is how kam is made. In the Caribbean it is common for mountain gauvas to be used and make homemade jam. Mountain gauvas are small cherry sized guavas that are much sweater than their larger relatives.

      Exactly, same as the difference between Coconut "Joghurt" and actual joghurt.
      The former is mainly sugar and carbon hydrates while the latter has a lot of Protein, as well as calcium.
      Honey is also the best anti-biotic there is, which is an added benefit, given the inflationary usage of anti-biotics and the rise of anti-biotic resitant bacterias and viruses coming out of certain countries like China or Morocco.
      The only thing those pathogens haven't been able to deal with yet is honey.
      And we've used it for centuries before to seal up wounds.

      Right. Buy local, small business honey and support a carbon negative sugar solution. Honeybees are better classified as naturalized instead of invasive in the Americas because they are not native but don't compete with native pollinators. Beekeepers rent their colonies out to pollinate the local fruit orchards we all benefit from. If you are vegan, it is arguably ethical to support local small business honey businesses because these keepers save the bees from fumigation and they have a lot better quality of life outlook. They also pollinate a lot of native plants that are being effected by pollinator populations declining. This video is awesome but ideally we have both options saved in the cupboards in glass jars instead of swearing off honey.

    Allergic to bees, allergic to honey. Just learned recently that honey isn't spicy to most people, and isn't supposed to be spicy unless peppers or such have been added. So, I'll have to try this with a few different fruits and see what I like. But there's sugar involved, so probably all.

      It has none of the added ingredients or benefits of real honey.
      You could easily fix that by calling it a honey replacement or fruit syrup as honey replacement.
      Now, if you wonder why I'm so anal about the difference, in my country we've had for decades a fight with certain food manufacturers switching out cheese for low grade "analogous cheese" in short, oil, emulgators and water to save a quick buck, and then calling that cheese.
      It opens the door for deceptive practices by corporations and activists, who then try to feed people worse alternatives to either save money and increase their profits, or make themselves feel good.
      And for the record, I have lactosis intolerance, so I know what it means to not be able to drink or eat something.
      As sometimes you get replacements, but your selection is rather limited.
      And you can't always throw lactase tablets on the problem, as those are more for emergencies. Like being at a party and no lactosis free food existing. If I eat to much food containing lactosis and cover that with lactase tablets, I get some side effects like Dandruff.
      The most annoying thing these days is people going "Oh just get the vegan alternative" despite quite a few of them not having the same health benefits or are actually worse for your health, like coconut joghurt instead of real joghurt.
      The former has tons of sugar, pretty much no protein, while the latter has more calcium and lots of protein and unless you get a sweetened one, no sugar.

    I’ll tell you another, slightly less complicated way of getting honey: step 1. Go out into the woods and find you a honey cone. Step 2. Extract honey from said cone. Step 3. Try not to get stung and enjoy.

      Well... sugar is sugar. Honey is made up of sugar, so no, it isn't a "healthy alternative". Though the taste is much better, depending on the amount of "real honey." Nowadays, it is often mixed up with a sugary replica.

      Not jam, cuz there is no actual fruit in in it, just whatever juice boils out. I dont think i would recommend this either unless you wash the outside well, its gotta be covered in pesticides.
