[INGREDIENTS] for 6 pies
{Puff Pastry}
200g unsalted butter
115g cake flour
115g bread flour
3g salt
100g cold water
Egg wash
You can replace 115g of bread flour and 115g of cake flour with 230g of all-purpose flour.
{Filling}
200g net weight pumpkin
50g granulated sugar
25g unsalted butter
20g beaten egg
50g heavy cream
3 drops vanilla essence, optional
1/2 teaspoon cinnamon powder, optional
{Syrup for gloss}
2 tablespoons granulated sugar
1 tablespoon water
Used a 9cm round cutter and a 6.5cm round cutter
Place in an oven preheated to 190°C, set the temperature to 170°C, and bake for 40 minutes. Brush the pies with syrup, and bake at 200°C for 5 minutes.
