    200g unsalted butter
    115g cake flour
    115g bread flour
    3g salt
    100g cold water
    Egg wash
    You can replace 115g of bread flour and 115g of cake flour with 230g of all-purpose flour.
    {Filling}
    200g net weight pumpkin
    50g granulated sugar
    25g unsalted butter
    20g beaten egg
    50g heavy cream
    3 drops vanilla essence, optional

    2 tablespoons granulated sugar
    1 tablespoon water
