The best cobia recipe ive ever used was given to me by a charter boat captain outta Cocodrie, La. Wrap the cobia steak 100% in bacon and slow grill it. When the bacon is done, the fish is done. The bacon grease keeps it moist and adds a little flavor. Most delicious saltwater fish Ive ever eaten.

Best thing to do is let the Charcoal get a grey color . Instead of grilling on raw charcoal . Just pile up some charcoal and put charcoal starter on it . Its horribly complicated , but it beats the hell out of a skillrt gas EVERYTIME .

By chance I found some lump charcoal and once it worked great but haven't found any since can you recommend a brand?
@@TiqueClarke I use big green egg lump charcoal. It’s a little pricey but it burns very clean. Happy grilling 😎
