Yes I think even many Americans were quite shocked as well, because most people feel it's important to respect the cultures and traditions of other countries.
I'm not a fan of MM, but feel it's possiable that she did not intentionally mean to insult our Queen personally, just mocking a royal procedure she felt was outdated etc.
She actually said good things about the late Queen in the Oprah interview. Like how Queen Elizabeth shared a blanket with her at a tennis match and tried to make her feel at ease etc.
MM's mock curtsey was more of a theatrical nature with arms outspread of how in plays on ancient royal times exaggerated curtseys were done. As such that Mock curtsey bore no relation to how we folk would curtsey to the queen or sovereign these days.
Doing a bob curtsey with arms to the sides and bend of the knee and slight bow of the head is how we curtsey now to a monarch, even if it's still carrying on a ancient tradition.
So I don't believe MM was personally getting at the Queen, but rather how she as a American relates to plays on ancient royal times and fairy tales etc.
Even so, it's never wise to make fun of other cultures, even if one is not intentionally refering to the actual monarch etc.
Just like Prince Harry should also respect American culture, laws etc and not call their first amendment bonkers, even if he is not getting at the president personally.
No one is forcing a person to live in a country if one doesn't want to accept their laws, traditions etc.

In Denmark we have a Tasmanian born Queen Mary. She does very well and knows to service and work for our country. She wasn't born royal, but had a real manager job befor marrying Danish Crown-prince.
