  • Recipe here: www.joyofbakin... Stephanie Jaworski of Joyofbaking.com demonstrates how to make Nanaimo Bars. Nanaimo Bars are one of Canada's favorite confections. The beautiful City of Nanaimo, British Columbia has claimed them as their own. The story goes that a Nanaimo housewife entered a recipe for a chocolate square in a magazine contest. She called her recipe 'Nanaimo Bars'. She won the contest, and her "Nanaimo Bars" eventually became popular throughout Canada, as did the town they were named after. These no-bake, three layered bars are famous for a reason, they are delicious. They start with a Graham Cracker Crumb base, followed by a layer of custard buttercream, and the crowning glory is a smooth and glossy layer of dark chocolate.

I worked at Tesla for 3 yrs and my coworker brought these in to share at our potluck. Well, she had with her an old news paper clipping of her grandmother who won the competition winning for the creation of the famous bars. At the time I didn’t think much of it but now that I see how famous these are I feel proud to have had them from the family of the original creator. Cool now I’m using this recipe to make them.

Thanks for making a Canadian classic from a city I do love and that many Vancouver Islanders love to hate. :) . New York Times made a bit of a mess of these and I'm glad to see you did the no bake traditional recipe. Using sweetened chocolate and/or sweetened coconut can turn these bars from delicious to cloying so take Stephanie's advice and use semisweet and unsweetened. Another nice finish is a conservative sprinkle of coarse salt on top before the chocolate completely sets for some salty sweet action.

Hi Stephanie, when I bake something it's almost always one of your recipes. My friends think I'm really good at baking but I must say I owe a lot to your technique and recipes. I have a question about this recipe: are you sure that the middle layer should only be using 55 grams of butter? I made these and the middle layer was quite grainy even though I mixed it over 5 minutes. I researched other recipes and most of them have over 100 grams of butter for the same amount of sugar. How do you get a buttercream that's not grainy? Thank you so much for sharing!

Hi Joy I love all your recipes, and have made several of your baking recipes. But last year we had to change some things when it came to the food and ingredients. And I would like to know, if you were going to attempt to make this for a low crab, would you make low crabs cookie and crush those or use almond and crush those. How would you go about it? Would you make some low crab cookies first. Or would you just use almond flour or blanched almonds? And using sugar free sugar like swerve sugar?

    Her recipe looks great.
However, the true story of the origin of the Nanaimo bar is they were originally made in England by the wives of the men who worked the coal mines in Nanaimo and they shipped them over for their husbands to eat. So they actually originated in England and were called Nanaimo Bars because they were sending them
    to Nanaimo.

    Hi Stefanie.
    Everyone loved the bars.
However, the next day I received a lot of request for Nanaimo bar bottom layer only.
My tasters said it reminded them of the chocolate balls we used to buy at the mall in the 70’s and to please make it for the Christmas midnight mass party on December 22, 2019.
So I made double recipe of only the bottom layer of the Nanaimo bars.
Added 120g of extra walnuts. Also used unsweetened organic shredded coconut (Anthony's brand on amazon) that helped cut down on sweetness.
Then made another batch of only the butter, chocolate, sugar, egg and vanilla extract mixture (total of 3 chocolate mixtures).
Mix all together following your directions, chilled overnight.
The result is a very good version of the chocolate balls of the past.
Moist, not too sweet, nutty, chewy, chocolaty and addictive.
I could not stop eating them.
They will be formed into balls then rolled in coconut, and cocoa and mixed red and green sprinkles. I’ll place each ball in mini paper cups.
This is a big batch cause i have 250 guest.
Freezes well and great to have frozen when I am craving for chocolate.
    Thank you again.

I don't think we have those in the STATES.....I will look the next time I go shopping....they may have them at the stores that carry different Countries products too like JUNGLE JIM for one, we have several of the other stores too, but can't think right now of the names as they are not close to where I live.....
