I think JRB was right to replace this song with "Shiksa Goddess" (even if the decision was made for him by some lawyers). I think "Shiksa Goddess" does a better job of: a) establishing Jamie's character; b) contrasting with Kathy, who's just sung "Still Hurting."
I see where you are coming from, but I argue that a) it establishes Jamie's wants and goals as a writer while talking about how wonderful he thinks Cathy is and how much he will do to be with her. Whereas with "Shiksa Goddess", there is only one line uttered that reveals his occupation as a writer and he's praising her and willing to date her because she is not Jewish like his past girlfriends. One of the lines is literally "...just as long as you're not from Hebrew school". b) it ties in better with Nobody Needs to Know, specifically with the final verse "And since I have to be in love with someone, since I need to be in love with someone, maybe I could be in love with someone like you" being nearly identical in lyrics, melody, and diction with the final verse in this song. c) it still contrasts with Cathy's "Still Hurting" because it is an upbeat number set in the beginning of the relationship.
I do think "Shiksa Goddess" has a catchier melody, but "I Could Be in Love With Someone Like You" does a better job at establishing what Jamie does for a living and the extent of his attraction to Cathy as he's willing to follow Cathy's lifestyle and traditions so they can date. In "Shiksa Goddess", all of his praising and willingness to be with her stem from the fact that she's not Jewish, therefore different from the other girls he dated.
This is a great song. I love Shiksa Goddess and I love this so I'm unsure if I'm mad this got cut from the show or happy that it did so Shiksa Goddess was put in.
I went to the same summer camp that Jason Robert Brown went to years and years before I did - one time he came and played a little concert and he sang thins song, it was so cool. Does anybody know if there are any recordings of NLB singing this available? I love Shiksa Goddess, but this is a wonderful song.

The one good thing about this song is it bookends so well with Nobody Needs To Know. Shiksa is, other than that, a better open for Jamie.
