We were in Italy last week, and had great pizza at Pizzavendolo, and had pizza at GustoPizza while in Florence. What I don’t understand is why the middle is so soft and not really cooked? When we were in Rome we had pizza at Sant’Isidoro - same style - Napoli, and the middle was cooked and did not hangover…it was really good. Roma pizza is also delicious.

After it's served, the centre of the base becomes a little sloppy with the tomato passata. That's how pizza is.... at least the original pizza. Check it out in Naples, Caserta and in the Capania region on your next trip! GustoPizza always has a long queueof tourists outside - was it busy when you went (I've never been)? And yes, great videos by Greg, aren't they.

If you go to Italy specifically to eat the best pizza in your life then Florence is not the right place as beautiful as it is.
You need to go to Naples if you’re looking for authentic pizza, but if you’re in Florence and looking for a good pizza then al pacchero is an excellent pizza

Even in Oklahoma you can get better pizza in a small town than the looks of that first place. That said, that’s why we have our own woodfire oven, lots of good wine and plenty of vespas. Ciao Gregor!!

I have to say we now have authentic Italian pizza where i live, and it's way better than North American style pizza loaded with pounds of ingredients. Thanks for explaining what makes a good pizza, at Il Cabbela

The best we had was in Naples, down by the marina tiny place on the sidewalk. Worst was somewhere in Venice, just meh kind of like the first place you went. But hey, you’re in Italy eating pizza, life could be worse, right?
That's right you can't complain too much in Italy and it's definitely worth eating at various places and trying the same dish in various towns and also just experimenting and trying new things. that's the beauty of traveling
