Taco Tuesday: Tacos Árabes

  • You’re likely familiar with tacos al pastor, that glorious taco filling of red chile pork and pineapple roasted on a vertical spit. Well, tacos árabes is just as delicious. Think of it as pastor’s lesser-known cousin, heralding from the city of Puebla.
    While tacos al pastor gets that remarkable red chile marinade, tacos árabes are flecked with a Middle Eastern blend of spices before getting spit-roasted and thin-sliced-they’ll probably remind you of a shawarma taco. Especially when you find out they’re typically served with thick flour tortillas, yogurt-like jocoque and cucumbers.
    Especially when everyone tells you that it was the Lebanese who settled there over a century ago and brought the techniques and flavors.
    Assuming you don’t have one of those big, vertical spit roasters in your kitchen-truly, my hat’s off to you if you do-we’re making a version where the sliced pork shoulder gets seared over high-heat on a grill pan. (No grill pan? Use a charcoal grill. No grill? Try cast iron. Just make it. You’ll thank me.)

    What makes Tacos Arabes amazeballs is the huge variety of sides. I feel that is the Arab touch.

    You forgot the chipotle sauce !
    Almost all the restaurants in Puebla that sell tacos arabes used a chipotle based sauce but other than that it’s looks good !

    It'll be a cold day in hell when I heat up thick chunks of cucumber to eat on anything! BUT, being born in Lebanon, raised in KSA & retired to Mexico, I WILL be making these. With local lamb, and my homemade thoom (Arabic garlic sauce). Cheers Rick, love your videos.     Funny, one of the foods I miss most living in Mexico is Greek food! I have been looking for unsweetened yogurt here but can't find any (in our city). They do sell jocoque but it's pretty runny. We slurp it like soup and eat it with eggs cooked with jalapenos, and fresh tortillas, of course! (Depending on where you live or if you live in a city, it can be hard to find the ingredients you're looking for.)

    I would prefer the cucumber in small dices with onion and chile, nice version of "Tacos Arabes" , it's worth a try...

    I am SOOO going to try this. Tacos Arabes was my go to meal in Puebla when I was pregnant. My husband would stop off at the stand on his way home and buy me one. He never told me what was in it, I think he was afraid I wouldn't eat it! He only said "try it, you'll like it" (that phrase tells you how old I am!) OHH, my mouth is watering. No place like Puebla for the best food EVER!!

    Tacos Arabes were created by Lebanon refugees that immigrate to Mexico after WW I. That explains why the Taco Arabe is very similar to shawarma.

    looks tasty! I've tried tacos arabes in Puebla and wondered about their origins. Rick, do you know how to recreate the tasty corn tortillas in Mexico? Their tortillas are like the rice in sushi, in that oftentimes they are the most important part if the dish. I have never had a tastier tortilla than when I was in Mexico. Maybe their ancient corn strains are in there. I've used a bunch of masa mixes and they just dont have that magic that the Mexican ones have. If you have recreated it, I'd love to see a taco tuesday on the most important part of the taco--the corn tortilla.

      +herrerabrew There's different kinds of corn tortillas in Mexico. We were just comparing the local tortillerias the other day and there are differences from one to another. Some use only corn flour, while others mix corn flour with corn (treated with lime). The ones that use only corn flour make thinner tortillas, so you get more per kilo.

      +Loraine Spencer I would love to go to Mexico, and buy some corn flour to bring back here so that I can have good tortillas made fresh every morning. I don't know if that's legal though

      I don't know where you live but you can buy Maseca all over the US. If it's not in your local grocery store, do you have a Mexican store nearby? I'm not sure, but if you live near the border of Mexico, you probably can bring Mexican flour back. They don't want you to bring meat, cheese, fruits and vegetables. But things like cookies are okay, so you can probably bring flour. Next time I cross the border I'll ask to be sure! They might say no because it could contain bugs, though.

      +Loraine Spencer yeah ive tried maseca, I live in los angeles so yeah theres a lot of mexican stores. to me maseca is just not the same. ill look into that next time as well.

    If i makes tacos and they look nothing like tacos from other pueblos, does that mean its not a taco but a mimic? Of course not, so what if he makes them a little different. Everybody adds their own twist to it. So pizza in the US isn't pizza because it doesn't follow the same process or ingredients as the Italians?
    PS I'm mexican too but cut the shit and give him props man.

    Yeah... Tacos al pastor is the signature taco of CDMX, not Puebla. Sorry, Rick.

    The recipe shows nutmeg under the instructions but nutmeg is not listed under the ingredients. :-(

    haha nice variation but the cucumber is way off, I am from Puebla and those would not be called tacos arabes at all. nice try though..

    I lived in Puebla, and never once had warm cucumbers in tacos árabes. Never. It's pork with parsley and oregano, with onion, and chipotle salsa served in a thick flour tortilla, almost like pita. No way is this the way they are made.

    this are not even close to the real tacos arabes... the real ones don't have cucumber it's only the meat and the sauce is Chipotle based some places add cheese to the tacos but that's it , no cucumbers or onions
