- During my visit to Almora, I got a chance to learn a few Kumaoni recipes. So today I have brought to you a special dish, Gahat Ki Dal. Horse Gram is known as Gahat in Uttrakhand. This pulse is also known by other regional names like Gauhat ki dal, Kulthi, Kulith, Garahat, Hulga, Kharthi, and Kulath ki dal, etc. Horse gram or Gahat is a very nutritious pulse with many health benefits.
In this video, I am going to cook Gahat Ki Dal in my style. Let's get started with this healthy recipe.

Namaste 🙏🏼 Chef Ashish Kumar ji, though I knew about this dal ( in marathi we call it kulti), I had never made it. Today for lunch I made it and it was excellent. I served it with rotis and jeera rice. I never knew this dal had so many health benefits, also I used Instant Pot and it cooked very well and needed less water. Your Hindi is pleasure to listen to. Living in USA our exposure to Hindi is less and I thoroughly enjoyed it. Thank you for sharing this wonderful recipe.

place soake kulith with 3 times water,in a pressure cooker. Add chopped tomato, 1t sarson tel, 1/2 t crushed dry red chili/chili flakes, 2 pinch hing, salt to taste. Pressure cook it for 30-35 min. When pressure is relesesed, open cooker, add masoor dal & cook for 4-5 whistles over med flame. Crush 3-4 cloves garlic, 1 green chili, 1" piece of ginger. Slice 2 small onions. Heat oil or ghee, Add 1t jeera. when fragrant, add onions to heated ghee . Cook till onion is translucent. Add crushed ginger-garlic & cook for 2 min. Add 1/2 t jeera powder, 1/4 t hing, 1 t kashmiri mirch powder (opt), 1/2 t coriander powder. cook for 1 min. Add 32-3 ladels dal cook till all is well fried. Add the rest of the dal.. Mix wel, mix well, bring o a boil, over med. heat. Cover & cook over lo-med heat fpr 5-7 min. Aff the remaining dal &mix well. Cover & simmer for 5 min. Add chopped cilantro & serce

We regularly make Gauth ki dal in winters.. we also like Gauth Paratha made with kodu ka atta. Our favourite.. These item we get from Dehradun or our native village in hills..one question Is Gauth Dal is hot during summer therefore not to be used during hot summer months in place like Delhi

उत्तराखंड की traditional कड़ी फाणु भी इसी डाल के पकोड़े बना कर लोहे की कड़ाही मे लकड़ी की धीमी आंच पर बनाई जाती है। पकने पर इसका रंग iron काला हो जाता है।पहले गाँव में इसे बहुत बनाया जाता था।

Harare yaha Maharashtra me ese Kulith aur Hulga bolted Hai. Aur ese sprout karke bhi banat Hai. Ese aate ka Zunka ( Maharashrian dish) banate Hai. Ese sprout karke eski dal bhi banat ai aaur sprouted kulith ki ghee me Khichadi bhi banate Hai. Aapki jarur bana ke dekhiye. Mere ghar me ye Bina onion garlic ki banat Hai. Mai aapki Har video dekh ta hu aur aapki Jo bhi vegetarian recepies ho ti Hai vo banat hu. Lakin aapki ki veg. Recepies bahut hi Kam Hai.

We North Indian have forgotten ancient food wisdom...our food habits have gone the way the marketing giants what us to eat... In South people are still following ancient food wisdom...this Daal is known as Ulvacharu in Telugu and we is widely used also drum sticks plant leaves and many such foods not marketed by MNC ...we in North just eating too much of wheat, GM modified Basmati Rice...too much dairy and refined flour...we need to change... including millets like jowar, bajara, raagi local rice reduce refined flour, limit dairy products after 35-40 age.

Chefji masoor dal dalneki jagah moong dal daltey to dal smooth hota. Kyuki gahat dal ek dry type ka hota hai. Hamlog west bengal pahad se hai. Gahat daal sirf bimari me use kartey hai. Lekin mai moong dal dalke try karungi. Mere pas ye dal hai ghar par.
