- As I start working on my keto cookbook, I am revisiting older recipe videos to streamline them, add any new tips/learnings, and to verify measurements. In this video, it's a lemon poundcake from over 5 years ago.

If you don't do "voice overs" for a living, you're wasting your natural gift! Please contact companies that do commercials ASAP as you have an amazing voice sir! Also, the lemon cake recipe is fantastic!
Hi, Steve…the name pound cake comes from the way it was made. A pound of butter, a pound of flour, a pound of sugar….therefore it follows that the final result would weigh more than a pound. My Mom taught me how to bake and I’m 78, so this method was from the olden days.

Thanks for the revisit, I forgot about this recipe! I'll likely just use the Crazy Richard's peanut butter that I have on hand already. Making it a little bit "nuttier" tasting sounds like a feature to me and not a bug.

Hey Steve I want to share a super easy frosting/filling I accidentally created. My stove is broken so i was trying to work with a double boiler MacIvered from the instapot - this turned out to be perfect to melt the coconut butter and oil. No measures , use your eyeballs. Coconut Butter (sometimes called Manna, it's whole coconut, analogous to peanut butter) presoftened in the jar then scoop some out. Now add some extra Coconut Oil (the butter is a little dry/crumbly). Mix in Lemon Zest & Juice, 1 tsp. Honey (or zero carb sweetener to taste. You don't need much bc the coconut butter is mildly sweet) Pinch of salt, a little warm water to thin it to an easily spreadable consistency. Thats it.
You can sprinkle toasted unsweetened coconut on top if you like. Next time I want to make with orange zest, juice and extract for a flourless dark chocolate brownie. Love that chocolate/orange combo. Best regards for your cookbook endeavor. It's gonna be great!
Edit: Oh duh you can probably make in a microwave - i don't have one anymore

I love citrus anything. Thanks for this Steve. I have learned to add packets of True Lemon to batters like this to amp up the lemon flavor without adding liquid. For something this large, I would add about 5 packets. I love that it has no specialty ingredients, just stuff you can pick up at the store. My local food co-op let's you dispense almond butter on demand for the qty you need, so yeah. (The macadamia butter is a challenge without going online, which I try not to do- no Amazon account.)

Nice one Steve😍. I dont have a problem with some of the ket ingredients aren't mainstream (flours, psyllium husk, xanthan, protein powders). Overseas viewers and those who are just keto-curious have more difficulty with things that have specific US suppliers like the 'soluble xanthan' and a few others not widely available like allulose
I’ve resigned myself to not pleasing all people all of the time. 😉

I was just at a King Arthur Flour store this past weekend where I saw a loaf pan liner that folded into the pan. I am now kicking myself for not getting it. Thanks for the new limp Steve. Oh, the recipe looks tasty too.
FYI - Steve’s comment about the price of Bocha Sweet. Yes it is expensive, and it turns out that all along it is just rebranded Xylitol (they call it Pentose). In fact the bags of powdered Bocha now show one ingredient on the label: Xylitol. Regular granulated Xylitol is quite a bit cheaper than the “premium” Bocha.

The term poundcake actually came from the amount of ingredients 1 pound eggs 1 pound butter 1 pound of flour - of salt and vanilla if you have it That’s from a 1890 recipe book that my grandmother had it does look good. Do you have a substitute for the almond flour? I have to have a low oxalate diet and almond flour is not on my diet
This is the only way I have made it.

Do you think sour cream would work in place of the nut butter, and enhance the tang of the lemon? Cheaper and easier to find.
@@YankeeLaker Sour cream has been used in older pound cake recipes to provide flavour and help with leaving, and I think it should work like yogurt.
@ that or some full fat Greek yogurt should work.

macadamia nuts butter is the king of all nuts butters! just eat with a dessert spoon = heavenly experience! 20 yrs ago I said that about peanut butter... but that now pales by comparison! Apparently I'm getting "bougie" in my old age!😅😅

I like using LorAnn Lemon Bakery Emulsion. Yesterday I made a keto gluten free lemon cake covered with a lemon syrup. I use Victoria's Kitchen flour (2024 edition) and tweaked a recipe, as this flour can be finicky.
A little of that in this recipe would definitely ratchet up the lemon flavor.
Adding that one to my list! Perfect idea for a dessert when having non-keto people over for dinner. Oh and two thumbs up on Terry’s T-shirt! 🤣

@@SeriousKeto WOW great job! I’m a fellow crafter and I have a Cricut Maker - assuming you used a Cricut, would you be willing to sell the pattern (vector graphic)? And if so how much?? I have made tshirts and mugs, etc and I know how much time it takes to perfect a template like that!

I will try this Steve! I will only try half of the batter just in case it doesn't come out right. Yet I couldn't imagine it not taste good with the ingredients. And this has heavy creme...hello!
Steven I know you are always looking for idea. Google lemon pound cake with oat fiber or whey protein powder and etc. Does it make a difference? BTW, I find the simple keto recipes just start tasting all the same. So the added variation of ingredients makes a difference. Whether it is Whey protein, bamboo or oat fiber, gelatin...or combination adding vinegar and etc. If you want me to email ingredients recipe like that...to let me know. I will look it up and send it to you via email.

You use a spoon to "spoon" something out, so I figure if I'm using a spatula... 😉
I wonder if adding a sachet or the True lemon might help to boost the lemon flavor or indeed a teaspoon of extract as I like to taste the lemon. I might up the sweetener a little too.
I was going to mention that you could use lemon extract in place of vanilla extract to really lemon-ize this.

Pound cake is called pound cake because:
1 pound of flour
1 pound of butter
1 pound of eggs
1 pound of sugar
makes a pound cake.

I updated the recipe on my website to include the option of adding Sweet Leaf lemon stevia drops: amzn.to/40FLfqt
In the original recipe, I had used BochaSweet granulated sweetener, but the price on that has continued to rise and the label now lists xylitol as an ingredient, which causes me GI issues.
Erythritol does terrible, awful things to me. But the cake looks delicious!

Because I can use a butter knife on a greased loaf pan faster than I can cut parchment to the proper size. 😉

Parchment trick: Wad the parchment into a tight ball, then un-wad it and press it into place. Try it!
