i like that you left in the partly nasty onion. Most of the time with cooking videos, everything used looks absolutely pristine, wich leads to people throwing out perfectly good food with the tiniest imperfections.

After watching this wonderful channel for a couple of months, I bought a cast iron skillet. One with two handles because I have a small oven. Best decision ever! I always buy good quality frying pans but none of them can beat that cast iron one.

My family has a cabin in the woods in Maine and I absolutely love cooking over the fire there. I get a fire going when I first get there, do chores, and by evening the coals are ready for whatever cooking project (usually steak tacos). Nice choice on the backyard kitchen.

I'd love an episode on how to cook different meats (steak, pork, chicken, seafood) over an open wood fire. How to not burn it, whether to marinade, sear afterwards, steak thickness, what works and doesn't work. Barbequed prawns are by far my favourite way to eat them - they get so savoury sweet and smoky.
Yeah would make a good video. In this video, he did offer some snippets though. It is intuitive. There are lots of variables like wind, which can increase oxygen to fire, and the wood you are burning. Just experiment. Have a hot place, and cooler place on grill. Some have a higher shelf, or can be raised like the one in this video. Alternatively you can move the fuel to one side of the grill, and create a temperature gradient from left to right. With regard to different meats, I am sure you are aware that some need to be cooked through. These will require more moderate heat at some point in cooking, to avoid burn on outside and being undercooked at centre.

I do the same if only part of the onion is not good, or beginning to deteriorate.
