- King prawns in black bean sauce is one of my favorites dishes. It is a savory and slightly sweet dish. Not as hot as the name suggested. The link above to my blog has detail recipe .
Ingredients
10 raw 26/30 tiger prawns
80g peppers cut to pieces
2 table spoon vegetable oil
Ingredients A
25g onions cut to small pieces
5g fresh chillies thinly sliced
5g garlic thinly sliced
10g black bean
Ingredients B
60ml water
Ingredient C
1g salt mix
1g oyster sauce
2g sugar
5g dark soy sauce
Dash of pepper
Dash of wine
Dash of sesame oil
Ingredient D
2g potato starch dissolved in 10ml cold water.
Blanch the king prawn in boiling water for 3 minutes to cook and set aside on a colander.
Heat wok till hot and add 2 tablespoons of vegetable oil.
Add ingredients A and stir for 10 second.
Add the peppers and king prawn.
Stir for 10 seconds and add water (ingredient B).
Add ingredients C.
When it begins to boil; turn down heat and stir in the dissolved potato starch.
As it thickens turn the heat back up for another 5 seconds to finish off. - แนวปฏิบัติและการใช้ชีวิต

Great vid again khoan, keep them coming, watched every one.
Very neat. I loved the video!
That's a beauty!
Looks easy. Easy if you know how!
Mouthwatering, again. Thanks Khoan.

Lovely.
Awesome Job.
I like this video :-) plus it would be great to learn to make and cook dumplings sometime. Hopefully you can post a video on how to.
Very good blog and channel!
Delightful Kwoan!
A trip to wing yip to restock and this will be getting made at the weekend. Thanks
Hey khoan, looks good. can you tell me what you did with those blackbeans first, where they steeped in oil or somthing? cheers mate
Asian cooking is crazy !
hi helen.. i took it off some time ago. you can always email or direct message me if you have any question about dishes in the ebook.
5:10 Nice : ) looks very good and I am sure it tastes great. I find it so funny that 90% of the recipes are based on the same ingredients :P
HI Khoan I made this twice first with prawns and the next time with chicken both turned out good what cut of beef would you normanly use for this dish and would it be the same for all dishes
Thanks again
Richard
yes, the shrimps are always cooked first.
as for the black bean...i have a video uploaded on its prep. .. or you can buy those in a jar。
Black bean is one of my fav chinese dishes, except i hate seafood of any kind lol
Khoan Vong hello Chef, yes you Cook your Shrimps First but only 25 sek. not 3 minutes as you mention in the Video/Infobox. I have seen that in many of your Videos. The cookingtime you mention in the Infobox is way too long as you do it in the Video.
Wing Wah is my local, think I will do the same Robyn.
The best - Great demo. I think you added corn starch and water at the end? Yum!
Imuse potato starch..actually I just shedule an update beef black bean sauce for this weekend.
will do same dish cook cook using different style .
Looks soooo Yummy Chef,...
Yeah, black bean is one of my favourites.
Theres another video on how to prepare dried black bean if you are intetested.
Okay, I'll check it out. But actually I mostly use the bottled / ready made black bean sauce from Yeo's or Le Kum Kee brands...
Widjoseno Sastroamidjojo they are a good brand. Make sense because unless you eat it all the time , no point in making loads. I only do it because i use it in the shop.
Thanks for watching.
How skillfull!
+georgcorfu Thanks:)
khoan look good ,,,,ps khoan can you help me Im try to fine how to make mandarin sauce can you make it ???
Khoan: Do you always pre-cook shrimp when stir frying?
JustAskingAndCurios
I just made this and it came out amazing. I think your measurements in the description are a little off though. 1 gram is only 1/4 tsp and you are using way more than that in your video. What I did was convert 1 “gram” to 1 teaspoon and it came out great. I also added a little MSG with the salt, and stir fried the shrimp in advance instead of boiling them. But great recipe.
Great to hear!
how did you make the black bean sauce, please chef?
+AbstractMan23 search my channel. I have a video on how to prepare black bean.
+Khoan Vong thanks chef :-)
Is there a special way to prep the prawns before cooking? It always turn out to be rubbery whenever i try to cook prawns. I've tried 2 mins, i've even tried 30 seconds.
coat it with potato starch. 2 minutes should be okay. Best use tiger prawns.
Where is your restaurant I would like to come
you can use chicken or beef instead.
Helen Rankin
Just use water or chicken stock to rehidrate the powder.....
hi chef ,do you mind listing ingredients, got veg cant make out rest
thx
my blog has beef black bean sauce; just change beef to prawns.www.khoanvong.com
Shifu. .🙇
Thanks yinglady😊
Like your vid ,but what you see a lot ring on finger while cooking.
I love this meal you cooked, but it doesn't even look large enough to even be an appetizer. If I ordered that as a meal, I would be very upset if that is all that came.
Looks really good but once the stuff gets thrown into the wok, we can't hear anything. The commentary gets lost in the fog of war...
Looks to me like the prawns are way overcooked.
horrible audio
Aren't you supposed to cut off the white membrane from the peppers? It's bitter and western cuisines never use them.
+Dewanto R. I like them, and I tend to not waste ingredients if possible.
