How to make king prawns and black bean sauce

  • King prawns in black bean sauce is one of my favorites dishes. It is a savory and slightly sweet dish. Not as hot as the name suggested. The link above to my blog has detail recipe .
    Ingredients
    10 raw 26/30 tiger prawns
    80g peppers cut to pieces
    2 table spoon vegetable oil
    Ingredients A
    25g onions cut to small pieces
    5g fresh chillies thinly sliced
    5g garlic thinly sliced
    10g black bean
    Ingredients B
    60ml water
    Ingredient C
    1g salt mix
    1g oyster sauce
    2g sugar
    5g dark soy sauce
    Dash of pepper
    Dash of wine
    Dash of sesame oil
    Ingredient D
    2g potato starch dissolved in 10ml cold water.
    Blanch the king prawn in boiling water for 3 minutes to cook and set aside on a colander.
    Heat wok till hot and add 2 tablespoons of vegetable oil.
    Add ingredients A and stir for 10 second.
    Add the peppers and king prawn.
    Stir for 10 seconds and add water (ingredient B).
    Add ingredients C.
    When it begins to boil; turn down heat and stir in the dissolved potato starch.
    As it thickens turn the heat back up for another 5 seconds to finish off.

    HI Khoan I made this twice first with prawns and the next time with chicken both turned out good what cut of beef would you normanly use for this dish and would it be the same for all dishes

    yes, the shrimps are always cooked first.
    as for the black bean...i have a video uploaded on its prep. .. or you can buy those in a jar。

      Khoan Vong hello Chef, yes you Cook your Shrimps First but only 25 sek. not 3 minutes as you mention in the Video/Infobox. I have seen that in many of your Videos. The cookingtime you mention in the Infobox is way too long as you do it in the Video.

      Okay, I'll check it out. But actually I mostly use the bottled / ready made black bean sauce from Yeo's or Le Kum Kee brands...

      Widjoseno Sastroamidjojo they are a good brand. Make sense because unless you eat it all the time , no point in making loads. I only do it because i use it in the shop.

    I just made this and it came out amazing. I think your measurements in the description are a little off though. 1 gram is only 1/4 tsp and you are using way more than that in your video. What I did was convert 1 “gram” to 1 teaspoon and it came out great. I also added a little MSG with the salt, and stir fried the shrimp in advance instead of boiling them. But great recipe.

    Is there a special way to prep the prawns before cooking? It always turn out to be rubbery whenever i try to cook prawns. I've tried 2 mins, i've even tried 30 seconds.

      coat it with potato starch. 2 minutes should be okay. Best use tiger prawns.

    I love this meal you cooked, but it doesn't even look large enough to even be an appetizer. If I ordered that as a meal, I would be very upset if that is all that came.

    Aren't you supposed to cut off the white membrane from the peppers? It's bitter and western cuisines never use them.
