    My husband’s favorite dish! He was so excited to see you make it together and we immediately ordered the necessary device so we can make it this weekend from your recipe! I am 1/2 German by ancestry so my maternal grandmother used to make this dish and I’m so excited to try to do it with my hubby!     My late husband's family was from Germany, and they use a batter like this and swirl it by the fork full, into chicken broth, (homemade broth, adding the deboned chicken back in at the end) to make a very comforting chicken soup that we call Capauna. It is so good and comforting on a cold day.

    My German grandmother never made spatzle, but my Sicilian grandmother made her own pasta. Every culture has a flour, egg, water and salt concoction, even the Asians 👍🏻

      True. At first I thought this was a German version of our macaroni and cheese in the US but it is a little different. Yummy I'm sure!

      I think the argument goes on forever: did western ( Italian / Austro-Hungarian etc) cultures develop pasta / Knödeln / noodles from Far Eastern or Asian influences, or was it independent?

    I live in a city in Alabama that has traditionally had a high amount of German people who live here. That means we have a couple of really good German restaurants, and my husband and I are going to one of them for our anniversary. Can’t wait. German food is one of my favorites.

    Near where I live in the mountains of north Georgia we have a town called Helen. Back in the 1960’s the town council got together and decided to dress it up as an alpine village from Germany or Switzerland. There are a couple of excellent German restaurants; two of them make their spartzel from scratch. My mouth was watering the entire video. Will definitely try it at home. Thank you for another sweet video.

    Perfekt, musste das ganze Video schmunzeln. Genau so mach ich meine Spätzla auch. Wichtig ist eben 1 Ei auf 100g Mehl. Manche nehmen Sprudel anstatt Wasser, angeblich wird der Teig luftiger. Ich kann gar nicht verstehen warum Leute Spätzla kaufen, so einfach zu machen.

    My Grandmother was a Brandenburg from Brandenburg Germany and she made this and a lot of other dishes as did her Aunts and Uncles that were released from the concentration camps . Her Aunt use to bring a German dish over everyweek in thanks of being alive. My favorite was a plum strudel type of dish and a redcabbage dish too. I love German food. I grew up on it. Thank you for making all these lovely things . 💕💕

      I am surprised bcz I am from the region Brandenburg/ Berlin and kaesespaetzle are here unknown as our dish - its known as a food from the southwest region( similar that you would say- scottish Haggis is a cornish dish😂)
      But ... its possible that inbthe past a girl from the southwest or a prissian girl with a period in the southwest brought this dish back to a Brandenburg family

    You are so right, nothing tastes like homemade food! This reminds me of the time my children were younger and we lived in the area of Stuttgart. We often made Spätzle (with a press) and I can make the statement: it is DEFINITELY possible to raise children only with Spätzle, if you want them to stay happy and tame ....

    My German grandmother made this and it was always a family favorite. My grandfather was from Mögglingen in southern Germany and my grandmother, who was raised in Hamburg, made it for him. I inherited my grandmother's spätzle press and will have to get it out now and try this wonderful recipe! I haven't had it in years and truly miss it! Thank you so much. This video brought back wonderful memories and touched my heart! ❤️ Stay well!

    What memories I'm having. My grandma use to make this dish and later on my mother made it also. So delicious! Thank you for the recipe. I am definitely going to try my hand at making it too although it's more fun watching Jorge make it.😋

    My mother replaced some of the water with kirsch when making spaetzle. Sparkling mineral water can also be substituted for tap water in the recipe.

    I‘m from Switzerland and we have the „Spätzli“ and the „Chnöpfli“ too. It‘s the same recipe but my mother used to let sit the dough for ar least 30 min before cook the Spätzli in the boiling salted water.

    I ordered the spätzle maker from Amazon and it arrived just in time for me to try this recipe for my husbands birthday and we loved it! He was curious why I was buying assorted Alpine cheeses at the store. It nearly ruined the surprise because he knew I was up to something. He tried guessing and asked me if I had ordered for him a fondue pot! I love when you share recipes that are quite simple yet totally different from what we're used to here in the states. My partner is Italian so I made sure to tell him he was not allowed to call it pasta!

      I live right next to Lorraine, France (Rhineland Pfalz Germany). I learned to make spätzle from my German mother in law. I use the press. Delicious!

    "Little Sparrows?" I learned how to cook these when I was staying with my friend in Bavaria. I brought back a spatzlehalter (is this how it is spelled) device that you used to demonstrate how you cut them off into the hot water. I have not used mine for years. Now I am inspired to pop it out from wherever it has been hiding.

    My mother made spaetzle. I don’t have the maker so I make kluski. Same thing just doesn’t require special tools. Love both. I make a polish dish called haluski which is cabbage, onions and noodles. Try it. Joerg will certainly love it and you might as well. I just purchased a spaetzle maker. Around $17.00 USD plus local taxes. Free shipping.

    thank you for the homemade spaetzle, Joerg did a fantastic job!! A trick a friend taught me once, and works really well is you put the ball of dough wrapped in cling film, put in the freezer for about 20 mins then when broth is boiling just grate the dough ball with a cheese grater right over and into the broth. They are smaller in size but works great. I also use that technique with baby dumpling dough over my chicken soup broth. PS, your dining area/table etc is so beautiful.

    Loved this video. I had a couple from Germany who lived across the street from me years ago who taught me how to make Spatzle. I use to spread it on a cutting board and cut it into the boiling water. After my neighbor made it she would use cut up beef roast and make a gravy to put in it. It was delicious.     The grilled onions and chives must really take it over the top! My husband is half German since his mother came from Bavaria, so he might appreciate this. I just ordered the spatzle maker just like the one you used in the video--from Amazon. So it doesn't have a press handle, like the one that comes up with the link, it slides back and forth.

    You both are so inspiring!! A wonderful German friend gifted me a spatzle maker many years ago and I have never used it. You have made the prep and execution look simple and easy; my mouth is watering for your mother’s spatzle!! Thank you both!!

      Oh you should use it! I think once you do, you will love it, it's honestly so easy. We just got our Spätzle maker last week and can't believe we haven't tried it earlier.

    Another great way to eat Spätzle as a main course is as Apfelspätzle (Spätzle with apples baked in the oven essentially).
    My grandmother always makes Apfelspätzle, when she makes Käsespätzle.
    A lot of young children don't like the strong tasting cheese used in Käsesspätzle. And this is a great similar dish.
    Both are extremely delicious.

    I will have to try this. Looks delicious! Thank you Kirsten and Joerg! I lived in Augsburg where my father was stationed in the Army when I was 2 and 3 (1955-56). I only remember saying good morning, good afternoon, and goodnight in German, Wasserklosett, and Wiener schnitzel. I wanted so much to learn German in school, but it was not offered the year I started a language, so went with Spanish. I also was in the Army and used Spanish in my job.I am a retired nurse now, and will be visiting England and Scotland next year! I just love you both!

    Lovely vlog as always, especially seeing how excited Joerg was to finally have homemade Spätzle again 🤗.
    For all you non Germans.. I always explain "Spätzle" to my family, friends and colleagues, when they come to visit in Germany, as "German pasta" (sorry Joerg😉) because pasta is all the similar ....
    Italian 🇮🇹 pasta ingredients are.. "flour, eggs, salt and oil "
    German, 🇩🇪 Spätzle ingredients are.. "flour, eggs, salt and water/milk".
    Chinese 🇨🇳 stir fry egg noodle ingredients are.. "flour, eggs, salt, and a very small amount of water (my recipe 2 tablespoons).
    .. All are cooked in salted water.
    Spätzle are just softer/rubbery when cooked because the dough is more liquid and can not be kneaded like Italian pasta.
    I like spinach (green) Spätzle when I go to Bayern. With a cheese sauce. My kids like them fried with bacon, and then grated cheese on top to serve.
    We use the Spätzle grater to make them at home to... It makes it very easy👍🤗.

      Hahah yes, being Swabian he just meant that Spätzle are Spätzle (the only word lol).

    (So sorry, I hit the button before I was finished!) I made this with the potato dish and the applesauce. My family absolutely loved it! It brought back the best of memories.     I have had this! It was seriously the most delicious thing I have ever eaten. I wish I could remember the village we were staying in...It's been over 25 years since I left Europe. Watching your videos reminds me of the wonderful times I had while there.

    I've made spaetzle using a potato ricer. It's kind of messy, but my husband really likes it. The cheese bake looks amazing. I might try that.
