  • In this video, I am sharing an oil free chicken fry roast for weight loss, this zero oil weight loss chicken fry is cooked in coconut milk without any extra added oil. This diet chicken recipe is super delicious, tasty, and healthy! a perfect dish for weight loss and weight management.
    Ingredients:
Chicken with bones (bone-in chicken): 900 gms
    for the garam masala:
    1/2 tsp saunf
    1/4 tsp jeera
    1 inch cinnamon stick
    1/2 tsp black peppercorns
    1/2 of a star anise
    1/3 of a mace
    6 cardamon
    1/2 tsp cloves
    1/2 of a star anise
    a small piece of nutmeg
    ------
    1 sprig of curry leaves
    1 1/2 inch ginger
    1 garlic pod
4 green chilies (use 2 if you want less spice)
    15 shallots
    -----
    1/2 tsp turmeric powder
    2 tbsp Kashmiri chilli powder
    1 whole lemon
    1 - 1 1/2 tsp salt or as needed
----- keep marinated for 15-20 mins--
300 ml coconut milk from 1/2 coconut
    2 sprigs of curry leaves
    --------
Grind the garam masala, keep aside half
grind ginger, garlic, shallots, curry leaves coarsely.
add turmeric, kashmiri chilli powder, salt and the ground masala into the chicken. Marinate the chicken for 15-20 mins.
Extract coconut milk from freshly grated coconut (you can also use storebought /canned coconut milk.
Add coconut milk to a heavy bottomed pan or kadai - iron skillet works best and I am using a deep skillet
Add the marinated chicken into the coconut milk. Cook as instructed in the video.
It will take 40-45 mins to get the chicken roasted in my heavy bottomed cast iron pan.
Garnish with the kept aside garam masala and curry leaves.
    Enjoy this guilt free chicken.

This looks so good. My Husband's grandmother was from Kerala and she loved me so much that she taught me so many good keralite dishes. Unfortunately, she passed away this last year in October. No one in the family knows how to cook keralite food except me.
@skinny recipes, Thank you for sharing this recipe. I will definitely try.

Given that the coconut milk will release it's fat content once heated , it is not at all "Oil Free". It is in fact made in Coconut Oil that comes out the milk that cooks the chicken. But a great recipe. Definitely worth a weekend try. Thanks for sharing. Much appreciated.

I got a question mam. Hope you'll clarify. The video caption said it is oil free, meanwhile its also said it gets cooked by coconut milk extracted oil while cooking, I heard coconut oil is the oil which has more Saturated fatty acid among any other oils. Is it still good to consume coconut milk extracted oil while cooking ?

    Hi
    Tried this recipe today.
    It Came out great.
Oil free - chicken roast curry (almost like a chicken fry)
    900 grams of chicken
    Garam masala
1/2 teaspoon somf also known as perim geeragam
1/4 teaspoon of greea of cummin seeds
    1 inch cinnamon stick
1/2 teaspoon of whole black pepper
    1/3 of a maze
    6 whole cardamom
    1/2 teaspoon cloves
    1/2 of a star
A small piece of a nutmeg
    Grind the above well.
Then keep half of the ground separately in a bowl for later use.
Into the same chattny grinder add a spring of curry leaves.
    11/2 inche ginger
    1 whole garlic pod
Add 4 green chilli, if you want less spicy add 2 or you can avoid it.
15 shallots (small onion) / (however you can also use one medium size onion).
    Then grind the above together.
Add the ground masala into the chicken,
    1/2 teaspoon of turmeric pow
    2 tablespoon Kashmiri chilli power
    Juice of one whole lemon.
    11/2 teaspoon of salt
With your hands mix the masala and chicken and keep it marinated for 15 to 20 minutes (or it can be kept over night in the fridge.
While the chicken is getting marinated, we need to make fresh coconut milk.
Take 1 half of the coconut then grate it. Then add the grated coconut to the chutney grinder and blend it with little water.
Once grinded add one cup water and then squeeze the coconut using a strainer to separate the coconut milk.
To cook use deep cast iron vessel.
Add the thick coconut milk, switch on the flame.
Once the coconut milk starts to heat up Add the marinated chicken, then give it a stir, then cover it with a lid and cook on medium flame, after 5 minutes open the lid and give it a stir it again, place the lid back, but give it a little gap for the steem to go, then cook for another 5 minutes, stir it again to make sure the chicken is not stuck to the vessel.
From now onwards keep the flame on the lowest,
we need to dry the gravy, keep stirring,
Once the gravy is gone add the kept aside garam masala and 2 springs of curry leaves.
    Again mix well,
    Once it’s cooled down.
    Ready to serve.
Family enjoyed the dinner, 2 and dish of yours I tried it and came out well.
    Thank you.

If swarna mohanty had written that Kerala is God's own paradise, I would agree. Kerala is a state of India and not a country. I have seen on videos that Kerala is beautiful. By the way, all of India is beautiful, but I don't like the mentality of the Indians, with the exception of those Indians who still appreciate norms and values.
