About the microphone dillema: 1 - you can use a third mic on the center and work on volume automation in the DAW (or not, it depends on what you prefer in the end). When you want the center, you kill the other two mics, and when you want the distinct left and right you kill the center mic. I know it requires probably the double, triple or even quadruple work on the editing part, but it's an option. 2 - The other option would be recording with one mic only and work on panoramic automation in the DAW. It also requires more editing, I thing less than the first option I described but more than usual I guess. Hope I helped :)) love your videos, your audio clean high quality and your creativity!!!
