Part of it is the fact that he is not taking the piece at his own tempo for the sake of the orchestra. It's normally around 30 BPM faster. I liked the Tarantella recording with the piano, also.
This is a set of Tarantella clips extracted from a Sergei Nakariakov film documentary. It shows his progression from Age 10-12 up until now.
