As a single man I have struggled for years to eat well. I usually dont eat enough, and what I do eat isn't wholesome food. This system of making family sized meals - healthy, wholesome meals that I know how to cook and like to eat - and then packing up into individual portions has been a real life saver for me. It sounds silly, but it has really been life changing. It's a relief to know that I have several weeks worth of meals packed away. Not just for a prepper situation, but for those times when I just don't want to cook. I think a book could be valuable to a lot of people.
I’ve been making my lasagna recipe in bread pans for several years now. The no cook lasagna noodles are just the right size to fit a bread pan. I line each bread pan with plastic wrap, layer sauce, noodles, cheese, and sauce just like I would for a large pan of pizza. I’ve learned not to overfill the pans! When I have them all made-usually four or five of them-I put them in the freezer until they are completely frozen. I then remove the entire plastic-wrapped lasagna and put it in a zipper bag and put them in the freezer. When my husband and I want lasagna, I just take one out of the freezer, immediately unwrap it, and place it into a bread pan to thaw. When thawed, I bake and serve it. One bread pan-sized lasagna is the perfect amount for my husband and I for a meal. I only make the lasagna mess once or twice a year and we have lasagna ready to go any time we want it! I agree with you that I want to prep meals once, package them in the appropriate size for the two of us, and then eat them multiple times. Makes life SO MUCH easier and we are still eating real food-not fast food junk.
As a single person, if I cook it tends to be an omelet. Making full sized meals and freezing portions is awesome.. I have a 14 qt stockpot, and make soup from scratch in big batches. I either freeze them in medium freezer bags (lying flat they stack nicely in the freezer) or if my big freezer has room, I freeze them in quart jars and store them in there. I buy veg in season and power cook soups. Lol. They usually last me all winter.
Great idea! Here’s a tip: after baking, flash freeze the little rolls on a baking sheet. Then place them in bags to freeze. That’s what I do for regular lasagna, but now I’ll give the rolls a try!
It's 3 am. My cats woke me up. Sooo, after a bathroom break I checked YT and found your video. It's just me here and I've been looking for single person meals to make for myself. This looks yummy!
Pam funny you put up this recipe! We had this the other night at Denny’s. We liked it so much we decided to make it for meals at home. Another thing: when I used to make lasagna, I bought some of the small loaf pans at the Dollar store, and make it that way. The little pans are enough for two normal servings and I vacuum sealed the pans for the freezer.

@@Foxysvacation You are so right! I use glass containers in the microwave. My mother's 60+ year-old Corning Ware baking dishes are still useful for baking, and also microwaving. An added benefit is a happy reminder of my childhood when I use them.
Prof Pam⚘️ I am sadly a home of one now.😢 I like making a full pan with leftovers to freeze... I really like your large filled shells to have in my freezer. Thank you Prof Jim--- 😊 Always #teamcantrell❤
I didn’t see the lasagna roll up recipe either. I haven’t watched all the way through. Maybe I’ll get enough out of the video I’ll be fine. My daughter’s favorite it spinach lasagna. The recipe I have freezes very well. I saw some other suggestions for other vegetables to include. I think that would be fun. I’ll try the recipe on here too. I just don’t eat much pasta. When I do eat it t, it seems that if there s is also meat in the dish it just feels heavy on my stomach. I love it, maybe I eat too much! Lol. There’s so many ways to try making it. I’m going back to the video now to see how you do it. I just wanted to mention that the video is not showing up on your list yet. We love what you do.
Thanks, Pam and Jim. Way back in high school in Home Ec class in 1982 or 1983 we made these. They were fun to make and a twist on lasagna. Thanks for the reminder.
Rolling the noodles is a great idea! I've always had to either eat lasagna for a couple days or pack it into the freezer. My little sister suggested I chill it in the fridge and if it was still loose, put it (cut) into the freezer until it was solid enough to wrap individually in plastic wrap then in foil, and put it in the freezer for storage. Been doing that with all the "loose" food ever since. Thanks for sharing the info and advice!
Luved your recipe for roll up lasagna!!!👍 I ALSO cook like u do and ALWAYS did even when we were a family of 6!!! Now I am a widow and the kids r all grown up with their own kiddos😂 but sonetimes l STILL COOK FOR EACH FAMILY TO HELP THEM OUT AS THEY WORK ALL DAY AND THEY LUV IT AS MUCH AS I STILL DO😂👍🙏😂👍🙏😂
This is a great idea. Thanks for all the videos. Really enjoy your interactions with each other. You are both wonderful teachers. And Happy Birthday, Pam.
Great idea. I would individually freeze them first then package them. Maybe even vacuum seal. This will be easier to do. Just my opinion. Thank you for sharing ❤.
You have worked so hard! This is a wonderful idea for a lasagna. It never crossed my mind to place pieces the other side 🤦🏻♀️. I found it very cute the way you’ve done it :) I live alone and I cook a lot! Separating everything in batches. Practical for me and for my 94 yo mom who lives by herself in her condo. Yup! Thank you so much for all that you do.
I’ve been living alone for many years, cook in bulk, freeze in single proportions, saves money, time, effort, don’t have the mess. I can have a really good meal in just a few minutes with no effort. I love this recipe and will be trying it soon.
You two are consummate professionals! You Explain things so well, own up to slight mistakes, and always have your audience/student at the forefront of what you are preparing. I just love you both! You’re terrific people!! ♥️🙏🏼♥️
I ❤ everything in the spaghetti family! I am trying to build our level 1 meals. I feel very overwhelmed but am working through it and appreciate all you share; you are both a big help!
I always make a big pan of lasagna too and it's just 2 of us. I cool it down, put in fridge and after few hours I take out of fridge, slice , wrap tightly in clear wrap and into freezer.
I used to make roll-ups with lasagna noodles, but with alfredo sauce over them. They were filled with chopped hard boiled eggs, the cheese mix w/parsley like yours, 2 or 3 small spears of asparagus. Then roll, place seam side down, top w/alfredo, sprinkle some chopped hard boiled eggs and mozzarella on top, bake. Had these every Easter morning after church.
Any meal can b e made ahead and frozen into a home-made freezer meals for an individual. I do this on a regular basis. I make 2-3 of any given meal and freeze it into individual freezer meals. I am a mom of 3 energetic hungry teen aged girls. They prefer their lasagna rolled more than layered as well.
Thank you so much for the time, effort, and positivity that goes into these videos. They are so appreciated and I look forward to watching more! It is very important for those of us who are attempting to prepare for whatever is to come.
I NEVER turn on the oven for one thing. I do a big batch cooking afternoon, where there is a casserole, some baked goods, etc., all getting cooked. As far as lasagna goes, yes, I always have some in the freezer, except for right now (August) because I ate the last one during 'bean canning time'. Last year during 'tomato canning time', I had enough sauce, tomatoes, etc., canned, but still plenty of tomatoes, so I made a bunch of lasagna in 8x8 pans. That was well worth it, and I'm doing it again. Another thing I love to freeze is meatballs. I make up around 5-6 pounds of meatballs, put them in the freezer in portions for me, and then can take them out and put them in any kind of sauce.
Oh my gosh! I love this idea!! These would be so much healthier to grab n cook than fast food etc when you are too tired to cook or feeling ill. I’ll definitely be doing these this week!!!
I am very happy with the frozen meals series you are doing. I live in a very small community in southern Utah. We were completely cut off from the rest of the world due to a flood in 2005. I had my 18 month old Granddaughter here at the time. ( you don't know when a catastrophe might happen) we didn't have water, electricity, or phones, for days. It is astonishing how long it takes to get very simple things done. For example It took me three buckets of water to flush the toilet once. My husband has some mobility issues, so he could not do those things. We could not flip a switch, turn on the tap, run the dishwasher, and many other things. We were prepared, BUT it was very time-consuming. I have things on my shelf and in my freezer because I have experienced how difficult it is. I might add we do have a way to keep our freezer going when the power goes off.
Our utility company just warned its customers that we should be prepared for blackouts! Good thing I've started taking Pam's advice about preparedness.
Wonderful idea. It's just me and my husband these meals are great portioned out. Sometimes I work long days and this is a great way for my husband to put in the oven and it's ready for when I get home.
I finely chop up broccoli, squash, black olives , artichokes, carrots, mushrooms etc & cook it into my meat sauce. I like it chunky with extra sauce anyway, great way to add vitamins and nutrients. It all tastes like the meat sauce anyway
I made these and they were so good. I added chopped broccoli, zucchini and some fresh spinach. I made 12. I will make them again. Thank you Pam!! And yes laying them down work much better. So good
I’ve made these before with just cheese filling, then added sauce at serving time. I like your method better! I would also consider popping roll into a muffin pan to freeze so the sauce stays discreetly portioned for single servings later. Thanks for bringing this great idea back into my freezer rotation.
My family is grown and gone so I know live alone, yet I always cooks food in batches so I can put servings in my freezer. Here's a little tip; when I use freezer bags I fold the top down so they stay open better making them easier to fill and food doesn't get in the sealing grooves. It just makes life a litter easier.
Many years ago when we had a young family, I'd make enough lasagna for that meal and two meals in the freezer. Now that we are senior citizens and don't eat as much as we used to, this is a perfect solution. I love your videos. You have a sense of humor even when you make a mistake. It just proved that everyone is not perfect. Thank you for ALL your recipes!
I used to make lasagna rolls (and will make them again this fall). I used to roll them and freeze them unbaked. They will flatten a bit, but it doesn't matter. To cook i woukd take some out and pour a combination of a quick white sauce and tomato sauce over them. Baked fresh every time.
Kudos for you being able to work with tomato sauce in a white blouse and not get any on you. Your recipe looks amazing. I try to do low carb and I have seen recipes where they do something similar using cabbage leaves instead of pasta noodles.
Happy belated birthday. You share it with one of my son's. When I saw what you were doing I got so happy. My people are mostly eating at different times so this will be a good one for us as well, thank you. Jim I was making thoughts on the laying them seam side down too. Its just Pam has so many great ideas I was being open minded to her creation. Haha, Pam your giggles are always making me smile. Don't go scaring Jim.
Hi, Pam & Jim! I can relate to the person who is asking for recipes for one or two. Yes, leftovers can be frozen but a single freezer can fill up fast. Since learning to can, specifically pressure can, I have been canning soups, chili, spaghetti sauce, burrito fillings, etc. I like that I am able to can multiple jars that are the perfect portion for two. It is then easy to grab a jar to heat up and cook the accompanying pasta, rice, or grains, if needed. It is great not to be as dependent on the freezer. We will be getting lots of flooding & wind from hurricane Debby over the next couple days. I have lost a whole fridge and freezer of meats & frozen meals multiple times from past extended power outages from hurricanes. Murphy’s Law - of course this was always after the fridge freezer were packed! I enjoy the recipes that you share & demo. You don’t need to change anything. Viewers can pick and choose which recipes will work for their needs. Thank you again for all that you both do to share this wonderful information! 😊
Pam: I usually partially freeze my lasagna before cutting into squares. This helps hold the squares together. Then I freeze them hard and vacuum sealing for later use. They can then be microwaved or placed in a pot of water that is simmering to reheat. I agree with the wasted energy comment. After 56 years of preparing meals, I too could use a break from the kitchen and enjoy any helpful shortcuts for pre-prepared meals. A Dutch oven or a deep casserole dish with a lid might work better. A spritz of vegetable pan spray (Pam no pun intended) will keep the foil from pulling off your cheese. I also use it in the cooking vessel to help make clean-up easier. Your honesty is priceless and I truly enjoy your videos.
I had to make these shortly after your video! Loved them and the portion control. I did lay mine down instead of standing them up.😅 Thank you for your informant videos. I learned to can a couple years ago by watching your videos. Much appreciate your patience, especially to newbies.
Beautiful...looking forward to making these. I agree, if we are going to turn our oven or stove on, we double or triple the recipe. Thank you so much for this recipe.
i've been watching a ton of your videos while i make apple pie today. not only does it make lovely background noise, i learn something! it also reminds me of my Great-Grandma; she made amazing meals. i'll have to try these one day.
I'm a party of 1, so when I turn on the stove I'm cooking enough to last a couple, or more, days. If I'm not going to eat it all, it gets frozen. I'll often have a cake or something, a meat & potatoes/veggys in the oven at one time to save energy..
Thank you! We are a small family at home as well. I do the same thing you do. Why spend all the energy, time and dirty dishes to do one small meal. It makes no sense to do it that way. Keep doing what you are doing. We appreciate you both!!
Hello, that looks delightfully yummy! Have not made lasagna in quite a while. May give it a go when my tomatoes come out of the garden. Thank you so much for sharing, don't forget the garlic bread. Have a lovely evening.
I love this recipe . I make for a large family . Then freeze it in servings for one . I have several dishes in my freezer an never eat the same thing twice in a row . An I cook once a week . 🌺
I've seen lasagna roll ups in a few places around the interwebs and thought they seemed like more work. It never occurred to me how much easier they'd be to portion out, so thank you! I'm trying to get more 'tv dinner' type microwaveable meals in the freezer for my Dad for days that I'm away or unwell!
I'm single, if I actually cook I make giant quantities. Enough for a couple of meals, and the rest is canned or frozen in containers for one or two more servings.
A suggestion for you to reduce the mess. Flash freeze your food before trying to put them in bags. Just put the pan into the freezer for an hour (no lid or other cover), then pull it out. Your food will be partially frozen and will stick together better which makes it far easier to get it into the pan. You can slightly separate the food in the pan first for how you will package it to avoid any problems if you forget to pull it from the freezer at the one hour mark, but this trick really works extremely well. This also works well on limes & lemons which I freeze to put into my drinks later. I just cut them into slices, lay them on a parchment or wax paper lined pan, and freeze them for about an hour. Then I can easily get them vacuum sealed without the juices creating a mess.
Hi. You might want to consider reusable storage containers. That way you won't be throwing away zip bags all the time. I love your show, and my whole family loves your recipes. Please continue teaching us. Be Safe.
I wondered why you didn't lay them down because the cheese will only be on the end, but I figured you wanted to do a lot (for efficiency!).❤ standing them up allows you to fit more in the pan, so it works either way, depending on what you need. You are not losing it, you gave us options! You should just say, "I meant to do that!"
I got the glass storage containers with the tight lids from Costco and I just store them in the freezer in those. That way I can either oven or microwave in the same dish. If you don’t put the sauce inside the roll up and put it over top in the glass container it works better IMO. Top with cheese and freeze.
Pam you're brave wearing that white blouse. These look amazing. Thanks for always sharing your yummy meals & ideas of how to save them. I'd have to make mine with Alfredo sauce. I'm allergic to tomatoes.
I agree with you about making more servings than just for one or two. I like to do this regularly which gives me the opportunity to have a night off of cooking.
For years I would cook meals as if the kids were home and then repackage to smaller meals for the two of us to have later in the week or month. It works out quite well and we know we have healthy meals to eat.
This look like it right up my ally. Just myself and hubby and we would only eat 1 each plus a salad. I was thinking about making this tonight but when I go to your Freezer page Lasagna roll ups recipe isn't there. I will check back later. Thank you so much Pam and Jim for all you share with us. 🥰
Making meal prep meals like the lasagna or casseroles, like you and Jim, it's just my husband and I. I use the tin foil loaf pans whether the regular or small it makes the perfect amount for a meal for us. Been wanting to try the roll up version, it will go on my to do list for this fall to get ready for winter.
I was going to say, "Why don't you lay the rolls seam-side down?"😂Almost 50 years ago, I belonged to a Betty Crocker recipe club where I received recipe cards monthly. One of those recipes was vegetable lasagna roll-ups. I no longer have the box of cards, but I still have the recipe. I haven't made it in several years, as I have a vegetable lasagna recipe I like better. Maybe I'll try rolling instead of layering next time I make it. I've lived alone for most of my life, and I still cook like I needed to feed a family. The cook and then freeze the remainder has been a life-long habit. Thanks for all of the information you share.
I totally agree with you. I always cook with left overs in mind. It is so nice to have them when I put in a day of sewing and am too tired to make a meal. I love to cook like that. I also make up a rub instead of buying ready made. My rub has gotten raving and my family loves getting some…to use themselves.
I admire your confidence working with tomato sauce in a white top! 😄 I’ve been working on having fewer ingredients and more meals in my deep freezer and this looks like a great recipe to add. Thank you!
Thank you so much for this video. The lasagna rolls look delicious & I'm definitely going to try this recipe. We appreciate all you & Jim share with us. Happy belated Birthday Pam🎉
They look great and I bet they are tasty. Your recipe is much like mine. I love what you do and so happy you got me into “proper” canning of my spag sauce…..no more oven canning….for me! Much love to you both.
Oh my goodness... I love lasagna... and my husband loves lasagna. I just don't make it because it is so darned time consuming with all the layers and the for me trying to figure out how to package leftovers. I see this way of making rollers less daunting to me and easier to plan and store for future meals. Thanks for sharing. It looked so yummy, I think I am going to make this real soon! ❤
I was wondering why you stood them up too, but I actually think that the standing up worked better. Great job. I think this is how I’m going to do mine this winter for next summer. Thanks.
I love making Lasagna Rollups. I also make small pans in case I want to share with the neighbors. I was one of the ones yelling at the screen to lay them down LOL I do seem to remember, years ago, seeing on a cooking show someone making a "rolled up" pasta dish in an angel food cake pan, but there was a LOT of sauce involved. Yours turned out great, and I'm sure they will taste wonderful.
Oh I agree 100%. I used to cook for 7 now it’s 3 but I still batch cook. If I am making meals I don’t want to cook all week so I usually cook one day a week as big batch cooking and making several meals at a time. Then when I cook during the week if I cook I double or triple it so I can put a meal or two back for days I don’t feel like cooking. I just package it in smaller portions than I did when cooking for 7.

Take care with microwave plastic - the current data shows it still puts microplastic into the food
@@Foxysvacation You are so right!
I use glass containers in the microwave. My mother's 60+ year-old Corning Ware baking dishes are still useful for baking, and also microwaving. An added benefit is a happy reminder of my childhood when I use them.
Prof Pam⚘️
I am sadly a home of one now.😢 I like making a full pan with leftovers to freeze... I really like your large filled shells to have in my freezer. Thank you
Prof Jim--- 😊
Always #teamcantrell❤
I didn't see the Lasagna roll ups recipe but will check back later, I try to download your recipes and have bought most of the books-thank you!!
Oh wow! I love, love this idea & looks like standing up worked just fine.
It Looks extraordinary! Thank you for another great idea!!
I will definitely have to try this. Great ideal!
TY for ur video. I've always heard & done cook once, eat twice. I still make family meals for myself & Frz leftovers for EZ PZ ready to eat 😋♥️👍
This looks delicious! I have to give you credit. I could never keep a white top clean around anything with tomato!
Lol, I thought the same thing about the lovely white blouse! That is more confidence & skill than I will ever have, but she nailed it. Bravo!
I don't have a t-shirt that doesn't have food stains down the front .
My husband's aunt used to make these - thanks for the memory! I need to make some and freeze them.
I ❤ everything in the spaghetti family! I am trying to build our level 1 meals. I feel very overwhelmed but am working through it and appreciate all you share; you are both a big help!
Yes a book would be good!!
I totally agree! Make as much as you can in one fell swoop. Then it’s so easy to pull and thaw.
I’ve been doing this for years…I cut the noodles in half and just roll up with the cheese then top it with the meat sauce and freeze😊
I have seen them done both way, standing and laying. I am sure they will be tasty either way.
I use thrive life freeze dried veggies to thicken my tomato sauces!
Yes, Please, write a book on cooking and preserving for two.
I love this and do it but I always love watching you and Jim, it was enjoyable as usual. ❤️❤️❤️
Thank you so much. Jim
Also, to make more and freeze is what makes sense for me.
I love them standing up!!! Floral like!!
Amazing tips! And you made that whole dish apron-less in a white blouse! My hero!
Kudos for you being able to work with tomato sauce in a white blouse and not get any on you. Your recipe looks amazing. I try to do low carb and I have seen recipes where they do something similar using cabbage leaves instead of pasta noodles.
These look delicious. I’m also very impressed you prepared this with a white shirt on 😂.
Fantastic idea to roll the lasagna. Love all your videos. Thank you for sharing.
When you started putting the rolls in the pan, my first thought was that I would lay them on the side.
Ohhh these look delish, as usual Pam and Jim, you guys rock, thank you 🌷🇨🇦
i've been watching a ton of your videos while i make apple pie today. not only does it make lovely background noise, i learn something! it also reminds me of my Great-Grandma; she made amazing meals. i'll have to try these one day.
I'm a party of 1, so when I turn on the stove I'm cooking enough to last a couple, or more, days. If I'm not going to eat it all, it gets frozen. I'll often have a cake or something, a meat & potatoes/veggys in the oven at one time to save energy..
These were really good and so much more convenient than a whole dish of lasagna. We could package a few at a time too.
Exactly! Thanks for your comment.
Pam, I like them standing up! I thought it was a neat idea!! Looks fantastic ❤ Thank you!
You are so welcome! Jim
I've made these and also stand them up, they are just fine and I think they look pretty.
Thank you! We are a small family at home as well. I do the same thing you do. Why spend all the energy, time and dirty dishes to do one small meal. It makes no sense to do it that way. Keep doing what you are doing. We appreciate you both!!
I wondered why you stood them up 😊
I would try freezing the rolls individually before baking
Hello, that looks delightfully yummy! Have not made lasagna in quite a while. May give it a go when my tomatoes come out of the garden. Thank you so much for sharing, don't forget the garlic bread. Have a lovely evening.
I love this recipe . I make for a large family . Then freeze it in servings for one . I have several dishes in my freezer an never eat the same thing twice in a row . An I cook once a week . 🌺
I am not seeing the lasagna recipe with the other freezer meal recipes ... has it not been added yet? Thanks for all that you share! :)
I do not see it either. I will have Pam Check on it. Jim
You are super great at what you are doing. You connect with the human side. Very classy lady!!!!
I love them standing up….pretty cool!!!
I'm single, if I actually cook I make giant quantities. Enough for a couple of meals, and the rest is canned or frozen in containers for one or two more servings.
Yep - why make the mess 4 or 5 times when you can make it once and put some food by for at least busy times
Be Safe.
This is how my favorite Italian restaurant makes their lasagna. Covered with a nice, light, tomatoey sauce. Best lasagna I’ve ever eaten.
I usually put three laying down in a smaller foil bread pan, put sauce and cheese on top, wrap in foil and freeze before baking.
Yes! Jim
This is awesome. Im the only one that likes lasagna in my family. Will definitely try this
We hope you enjoy it. let us know the results. Jim
I admire your confidence working with tomato sauce in a white top! 😄 I’ve been working on having fewer ingredients and more meals in my deep freezer and this looks like a great recipe to add. Thank you!
You are welcome. Jim
Thanks.
Yes I lay mine down with seam on bottom we love it
I love making Lasagna Rollups. I also make small pans in case I want to share with the neighbors. I was one of the ones yelling at the screen to lay them down LOL
I do seem to remember, years ago, seeing on a cooking show someone making a "rolled up" pasta dish in an angel food cake pan, but there was a LOT of sauce involved.
Yours turned out great, and I'm sure they will taste wonderful.
Thanks for your comments. Jim
