    All your ingredients look amazing. The ricotta, yum. The eggplant looks delicious fried. Awesome casserole. The homemade sauce looks so delicious.

    Looks great. I wish I could get to the market. In my Italian family, we refer to the sauce as gravy. We flour our eggplant too, but most times fry it that way, without using breadcrumbs.

    This dish looks amazing! I DO NOT have good luck when it comes to eggplant. It always tastes bitter. I will try your method of laying it out for 10 minutes between the paper towels. I will definitely be making this! Thank you so much for sharing!
    P. S. if you don't mind, may I ask where you purchased your containers for flour and sugar? I have been looking for something like that. I like how you can measure right from the container and level off the cup! Thanks again! Take Care

      Thank you! I think removing the skin and salting them definitely helps with the bitterness--this did not taste bitter AT ALL. I bought my flour and sugar containers at Bed Bath & Beyond! I think they are also on Amazon. The brand is called Snapware. They have held up SO well for 6 years and counting. Just don't drop them top down onto a hard floor--then the plastic will crack (speaking from experience, haha!)

    I was looking for some eggplant recipes as my boys hate eggplant lol. I really wanna make something good to sway their opinion on eggplants. This seems like they might give it a chance. Thanks for sharing:)

      Ooh I hope so! My husband is picky about his eggplant--he loves this because there is no skin, the slices are thin, and nothing tastes bitter. Good luck!

    This looks so tempting. Dad says watch out for a garlic shortage and increase in cost due to many more at-home cooking sessions because of the virus. No garlic would certainly affect your kitchen efforts.

    I love eggplant parmesan, yours looks amazing! I've been making your sauce since I first found your channel. I have to double the recipe so I can share with my kids and grandkids, they love it. Jar sauce is never on my grocery list these days 😄

      Oh my goodness--thank you so much for sharing that! I typically make sauce a couple times a month (and it lasts for several meals). I can't wait to tell my mother-in-law that you like the recipe.

    Bonne recette. Il aurait été très bien mais... Non! Il ne faut jamais utiliser ce faux fromage en cire de la boîte verte!!! Ça fait vraiment rater le parmesan 😬

      I don’t speak French, but I think this has to do with the cheese in the green bottle! Feel free to use freshly grated Parmesan if you have it! 😊
