I've always kown to use moisture resistent drywall around tub surround - not regular drywall..
For bathrooms always use moisture resistant drywall.

Don’t have to…good paint and sealer will keep it protected. If you can, yes, but not needed.
How many time did you come back and fix them drywall cracks? Paper with that premix would've worked better next time, Or get the hot mud for the web tape. Durabond also to fill them voids before you start anything....prefill goes a long way

What makes the dry wall level at the top after it is placed over the lip of the surround?
Nothing! You would have an uneven look as the drywall would stick out and be very noticable.
How much for Driwall repairs and paint the entire bathroom?

Yes you do
What about the old tape around the ceiling? You are adding New tape what happened to the old tape on the ceiling part since that drywallremains up. DO you cut it out? Or just tape the New over the old (on the ceiling part?)
I removed an old mesh tape and put a new one. It is easier.

Step ladder be sure to protect tub with a largo piece of cardboard or a thick moving blanket

yes, otherwise there's no other way to attach the drywall, the assumption is the force between drywall and stud would seal around the hole that screw has made.
I had to fix mine after a plumbing leak

Welcome to youtube. The best part is you will have dozens or even hundreds of clueless twits telling them what a good job they did, even if everything they did was wrong.
Yeah with fill and then thin tape you can get away with it. Also your tape is a straight edge...wait he didn't use the tape straight edge or hot mud on that web tape...
So this is remodeling not repairing a drywall.
This is a video about how to install a drywall around bathtub
The steps will be exactly the same. Screw in the drywall, tape, mud, sand. I would however recommend using paper tape in the corners, not the mesh tape. Paper tape in corners is best practice. There's a product called "perfect 90" I think. It does corners really well.
