He did say "There'd be torture first", and he did let her suffer. With Dean, you can never just choose which part you want - it's all or nothing. Really should have learned that when Azazel died in that graveyard in southern Wyoming.
My favorite part about this scene: Even though it was an improv, Jensen was so devoted to that 'blind rage' look at his eyes didn't even twitch when Jared started waving his hands in his face. Most of us, our eyes would twitch to see his hands raising before refocusing. He did this all in one take. That's a show of great control and dedication to playing your character just right.
