This winter special recipe of Sarson Da Saag Makki Di Roti in punjabi style is so tasty and healthy yet so easy to cook. High in protein, fiber, iron and improves metabolic activities, this सरसों का साग मक्के दी रोटी is packed with nutrition and taste.Try it, you will love the taste.

Ingredients
1 kg fresh mustard leaves (sarson ke patte)
200 gms fresh spinach leaves (palak)
100 gms bathua
Salt to taste
2 medium onions
2 inch ginger
8-10 garlic cloves
3-4 green chillies
4 tbsps ghee
2 tbsps cornmeal (makai ka atta)
Method
1. Roughly chop mustard leaves, spinach leaves and bathua together.
2. Heat ¼ cup water in a non-stick pan, add the chopped leaves and a little salt and let them cook.
3. Finely chop onions, ginger, garlic and green chillies.
4. Heat 3 tbsps ghee in another non-stick pan. Add ¼ cup water to the leaves cooking in the other pan and blend with a hand blender.
5. Add onions, garlic and ginger to the ghee in the 2nd pan and saute till light brown and fragrant. Add green chillies and the greens. Mix well and cook.
6. Add cornmeal and mix and cook till the mixture blends well and thickens.
7. Add the remaining ghee and mix.
8. Transfer into a serving bowl, place a dollop of white butter on top and serve hot with makki di roti.

Nice try! I think, key to real authentic saag is slow cooking over a long time so that all ingredients gets happy and atta can get caramelized and saag gets little sticky not runny. Caramalization takes the bitter taste away too.

The actual receipt of sagg is sagg with stem, batho palk, hari mirchain namk dal k achy sy gala k ghot dyn. Tark. Kehsan adrak hara pyaz ghee mein lagta hy... Gandal dy bakhair sagg eyh ty sag de basti aa je.

I think sarso ka saag Jo hai use cook Karne ka method all over India me alag alag hai. Like Bihar me ise bathua ya palak ke sath banaya jata without masala or tadka lagaye sirf kache lahsun and mirch , adrak ke sath khate Hain and ye bikul dry banta hai without water use kiye. And sirf sarso ke saag ko tadka lga ke sarso ke maasale daal ke bhi banate Hain dono ka alag taste hain. Thik waise hi Western up me different , North India me different jinme pyaz ka tadka, maasale and kahi kahi tamatear bhi use karte Hain. So this is beauty of India , we cannot criticize anyone that his method is bad or his doesn't know how to cook. If u don't like then it's ok .we should respect everyone's choice. Sarso ka saag is not something which has geographical indication. That it must be cooked in this particular way unlike idli dosha, litti chokha etc. These food have certain fix ingredients, a fix taste particular way of cooking and fix traditional taste also and have certain place of origin also. There u have to follow the traditional method otherwise u won't get the taste and in that case if someone is not following the procedure then u can criticize him because lack of procedure will affect the taste and ppl who are gonna to try for the first time they will get wrong taste and they might criticize the food. That required to be protected.
