Come winters and we all wait to make Sarson ka Saag. The Punjabi Sarson ka Saag is a recipe that many want to try and replicate at home. So I have shared with you the authentic Punjabi Sarson ka Saag recipe today.
This sarson ka saag recipe is a family recipe that I have learnt from my Grandmother.
The sarson ka saag is made not just with one saag but 3 different types of leaves or saag- Mustard leaves, Spinach leaves and Bathuwa Leaves.
The sarson ka saag is never blended in a mixer jar but still has a smooth texture thanks to a special ingredient added to it. It is the corn meal or make ka atta that is cooked into the saag that gives it the smooth texture.
Finally the saag is finished with a tempering of garlic, onions and whole red chilies.

Recipe :
Sarson Ka Saag
Preparation Time: 40 minutes
Cooking Time: 90 minutes:
Serves: 5-6
Ingredients:
1kg Mustard Leaves
500g Spinach Leaves
250g Bathua Leaves
10 cloves Garlic
2” Ginger
5-6 green chilies
¼ cup Ghee
½ cup chopped onions
2 tbsp chopped garlic
3-4 whole red chilies
¼ cup corn meal (make ka atta)
Method:
Pick and wash the saag leaves at least 3-4 times in plenty of water.
Chop the leaves fine.
Bring to boil 4 cups water.
Add the chopped saag leaves and cook.
Crush the ginger, garlic, green chilies in a pestle and mortar and add to the pan.
Cook over medium heat for 30-40 minutes till the saag leaves are tender and well cooked. Keep mashing the saag well occasionally.
Remove from heat and mash well. Add the make ka atta a teaspoon by teaspoon and mix well. Add salt to taste. Put it back to cook and cook for 5 minutes more.
Heat the ghee in a pan, add the finely chopped garlic and saute till golden. Add the chopped onions and saute till golden. Add the broken red chilies and mix well. Add th cooked saag and mix. Serve.
