​@Kallway that Powder name is Sumak/Sumac, you can go to any grocery shop Turkish, Iranian,or Marrekesh/Moroccan shop an ask for Red Sumac, there is also one light in colour, that is from IRAN, very Sour that is 🤤🤤🤤

Meat cuts before being sent to the restaurant, are indeed washed.
However when cooking, the spices, the heat of cooking etc. makes the meat quite microorganisms free…
The cooking methods and style of these Turks are centuries or millenia old..
