I love this dish during the summer with fresh cherry tomatoes and basil from our garden, but it's a great one to make any time of the year.       I started using nitrile gloves. Stems from my barbecue cooking. I started gloving up because half the rub got stuck to my hands. Now I glove up any time I handle meat.

      @@SipandFeast I'm glad u were making some points about the Burner u regularly use(I was intending on asking u what make they are,but I don't think it's necessary).
      At present I use Electric,which I think are Crap compared to Gas,but we what we do to get by!.
      .But once again u cooked up a nice meal!

    I love your videos dude. Yours is the first channel I've seen that showcases Italian food without being pretentious or insufferable about it. You seem like a decent, down to earth bloke with a passion for Italian cooking

    I love that your son always taste tests. All your cooking reminds me of home (I'm from lower CT - I even personally know the Sclafani family whose tomatoes you always buy in your videos!). Half of my family is from the Bronx/Westchester/Yorktown. My father was born in Italy and my mother here, so we are the stereotypical Italian-American family. This type of food is something you can replicate but the culture, family ties, and what this food means is something that comes special from the heart, and it's easy to see that is what you and your family know the true value of. Thanks for sharing.

      The compliment you have given lets me know that I am moving in the right direction with these videos. I try to only share what I know, and that's Italian-American cooking from the east coast. I love the Sclafani tomatoes because they are a great value and I feel good recommending them to my viewers. I think Sclafani (the ones I use) are owned by B&G. I know there is another Sclafani company as well which is a bit confusing. Thanks for the comment.

    There are a lot of great cooking channels on youtube, and I watch and subscribe to quite a few of them. I started watching your videos since a few weeks ago, and have to say that this is my favorite cooking channel! Beyond the food looking great and the process understandable, I think what I appreciate most is your humility, genuineness, and that you're approachable. Rather than looking to entertain or put on a show, what comes off is your desire to share your family cooking with others. There's just something about your channel that feels very homey. Keep up the good work and I have a feeling you are going to become even more popular on YT.

    This is an amazing suggestion. I have been staying away from cooking videos.... but your channel popped up today. And glad it did because just yesterday I did not know what to do with some cutlets I made. I eat a tremendous amount of pasta but sometimes I need to try something new. A tomato salad like this looks great!

    In Argentina we call this Supremas or Chiken milanesas. We eat this almost every week and you can find it in every corner of our cities as Milanesa sandwich. Also as Milanesas napolitanas you should definitely try it. Cheers from a new fan from Argentina. ♥

    Another potential favorite to try. A word on electric stoves: I have always cooked on electric. The one time I had a gas stove, I hated it. When you get down the techniques of using electric (or induction), how the heat builds, and how the pans retain heat, etc... then results are the same. And yes, inductions are expensive, but you can get them as stand alone units (like the small camp cookers you are using) and those are not terribly expensive. I'd rather have two of those units to complement my electric cooktop. Just my opinion and experience.

      Most of my life I have cooked with electric stoves. I do think it requires a different cooking style than gas or induction. If I was filming over my electric stove I would go into the technique.. One needs to move the pan away from the heat and wait for the burner to cool down versus gas and induction where you can just lower the heat and get immediate feedback. I do have a stand alone induction, but the wire is a problem and it makes a lot of noise, so I opt for this butane burner setup. Thanks for the comment.

    This will be a great recipe to make for my son, he has type 1 and the mozzarella (0 carbs) and tomato salad are very low in carbs, thank you. Good alternative for him to carb heavy pasta.

    Looks awesome, especially the cutlets. Such comfort food. I make caprese salad with cherry tomatoes at least times a week all summer. I don't know if you ever tried this other salad, but it's amazing, especially with crusty bread. Slice about 5 or 6 good sized romas and one regular tomato, thin slice a half an onion, add 2 cups water, a tablespoon of oregano, a solid tablespoon or more of good olive oil, a good helping of salt and some fresh cracked pepper. Let it sit on the counter a good 2 or 3 hours to steep. It was something my grandmother made often when they were dirt poor in the 30s and forties and it's absolutely delicious for lunch or as a dinner salad with fish.

    Bravo on the tomato salad Jim! My favorite way to eat it with or without the mozz. You gotta let it sit like you did so the salt makes the juice and the flavors meld, just like you do with sugar in strawberries. Your breadcrumb mix is just like my Mom made, but she never used "seasoned" crumb, always grated her own. Using the cake pan is genius, thanks for the tip! I swear I can smell those cutlets.       I've made so many cutlets on this channel and change up the breadcrumb mix pretty much every time lol. I think I do it just to keep things interesting. Glad you like the Pecorino in your breadcrumbs like I do and thanks for watching my videos!

    Made this tonight! I halved everything because it's just me and the hubs, and I butterflied (butterflyed?) the chicken instead of cutting through completely. There are no leftovers 🥰

    Next time you make cutlets, would highly recommend adding a squeeze of half a lemon into the egg. It's subtle but adds great depth/flavor to cutlets. I otherwise cook them exactly the same way.

    I just happen to have the tomatoes, fresh mozzarella, and my little aerogarden basil has a few nice leaves on it, so I think that caprese salad is going on the menu.I don’t even feel guilty for not having any chicken ready because you are so good at encouraging us to cook with what we have and what we like. I did buy some of the Frantoia olive oil to try, on your recommendation, so it should be delicious!

    I like the intros where you say enough to explain exactly why you do or don't do something, but nothing where you spend more time talking than cooking like some other channels. Your food prep almost has a Zen ASMR aspect to it,, just the sound of food preparation. Smooth professional to the point explanation, and a happy son and proud dad at the end.. Good stuff.

    I could so see taking that and and putting it in a baking dish and allowing the tomatoes to get jammy. The cheese to slightly melt with the lightly cook basil. Or even just putting the topping in the oven and topping the cutlet. Especially in the summer when we have so many cherry tomatoes. Will definitely save this video!

      That's a good idea. The topping is really good on pizza too. Some shops sell a marinated tomato slice.

      @@SipandFeast We make subs and I have gotten to where I dice up the Tomato and onion and add a little olive oil,s & p, garlic and onion powder to the mixture and let it sit while I get everything ready to assemble. The flavor is so much better and you are not pulling out a whole dice of onion or tomato when you take a bit. Best change ever. Got the whole family doing it. 🙃

    I have a glass cooktop and it works well for me. The only thing is you have to set the heat significantly lower than a gas stove. I pan sear scallops perfectly at the 5/10 setting, but when I made them for my mom on her gas stove the heat needed to be on high.

    Looks fantastic! I like to add a little arugula to the top of the chicken cutlet on the plate, then add the tomato and mozzarella on top of that.

    This has quickly become one of my favorite meals! I love caprese salad, and I love chicken cutlets, but somehow I'd never considered combining the two. I was always a little nervous shallow-frying, but because I keep making this recipe, I've gotten so much better at it. 10/10, really love this one.
