They look good, but wait until the smoke turns blue and whispy before you put your food on next time. That white smoke is pretty acrid and imparts a bitter taste. That blue smoke you had towards the end is what you actually want to penetrate the food. That will give it that good hickory flavor you expect.
Agreed, I only did it on these eggs and it was because I used chips and not chunks, I just needed to pack in flavor within 15-20 minutes and they came out great but I don’t do this with meats.

😂🤣😂 spent a lot of time in Utah filming movies and car commercials with my dad as a kid and a lot of time in Salt Lake area…… I totally understand what you say about your weather, massively extreme up and down! Here in SoCal when we get rain more than two days in a row we freak out! I love it…. Just not on Grilling days. ♨️🤣
