I would exchange the bechamel for French Chicken Supreme sauce used in chicken a la king. The simpler spice upgrade is the clear winner here with its spice combination. I love these sandwich videos!
Not much. The French tend to infuse the milk/cream with some flavorings like bay, onion and strain before adding to flour/butter mix. White sauce does not really require that.

No doubt if you were living a normal and less sandwich-filled existence than the rest of us mortals you'd have plenty of opportunity to remake the best of the sandwiches you try, but what does it mean when you make slightly less than one brand new sandwich per day? I appreciate the videos, they make for a welcome familiar part of my daily routine :)
I personally wasn’t pleased with the seemingly small amount of red pepper. I would personally up that by maybe 5-7 pieces of that size. Glad the plus up worked so well, especially as someone who’s become incredibly fond of traditional stuffing. Helps that I finally learned that stuffing isn’t the junky innards of the turkey made up with essentially a mirepoix and then put back up inside. My best visualization for it was chum from SpongeBob

I’m a long time subscriber and watcher. I’m also a public high school teacher, and showed my class a few of your episodes for the first time today. They loved it. The short length is perfect to show as a reward without feeling like we wasted away valuable time. They were apalled by the Crisco sandwich.

That looks very doable. The all purpose seasoning was a great idea (I might even use Spike and a little chili powder). 1927 was on the right track.

I think how bland the sandwich is could be a function of how the chicken was prepared.
I think I cut myself cleaning the bread knife at least once a month. Stupid ultra sharp Japanese one. Lovely knife though.
