Hi, I believe there's a pickup window (8am - 9pm) at SIM card counter. If your phone is unlocked and compatible, i suggest ordering eSIM online and you can do the setup yourself. Also, if you can't do it at the airport, there are vendor stall or phone store in touristy area that you can get SIM card there. Seoul has a lot of public Wifi, I survived 10 days in South Korea and didn't get my SIM card until I landed in Jeju.

They are all good but the big one is SK telecom. The prices are the same from what i notice
