The score and the music as sung sometimes diverge in that some G# are sung while not indicated in the score and sometimes the G naturals are sung as they are.
This is rather common with Renaissance music. Very often accidentals are not indicated in the notes, but were expected to be sung. Often modern performances of the same Renaissance piece are not uniform as to when to sing alterated notes and when not. This phenomenon is called "musica ficta".
