      That hairline is proof positive he didn’t go to a plastic surgeon who’s skill level was on par with his chefin skills. It’s criminally bad insofar as it’s obvious artificiality.

    What a humble master of the culinary arts. I wasn't intimidated to watch this, it felt like I was watching my uncle teach me something. What a great guy. I would love to learn more knife skills from him!

    I travel a lot for work and I love watching the kitchen work Japan is always my favorite. I take time off and go to Hokkaido. The seafood restaurants at the docks are my favorite. you watch them bring in all the fish from the boat. And while they are cooking you here silence. You smell the oils, and sauces.
    Watching a kitchen work so efficiently without anyone breaking silence once, is the most beautiful, and peaceful experience anyone can have.

    Jeez, what incredible skills the way he trims those fish perfectly with absolutely zero waste, and the way he unravels an entire vegetable in one piece like a scroll. Unbelievable. I'm pretty sure he gets knives made by some old-timey traditional Japanese smith like they were a set of Hanzo swords or something. Morimoto is like a samurai of sushi.

      The knives he are using here are Miyabi which is Zwilling's Japnese knife division. They make great knives with incredible consistency!

    Morimoto has is probably the best I've ever seen with a knife. If I've ever seen someone better, ironically enough, it's his Iron Chef colleague, Hiroyuki Sakai.

      Agreed. Morimoto and Hiroyuki Sakai are excellent. I also highly recommend watching chef Hiroyuki Terada and his knife work. Very precise and skilled as well. He has a TH-cam channel as well.

    Note: On the Knife sharpening section Mr.Morimoto talks about grinding 1 side 8 times, the other twice. I believe that is because he is using a japanese single beveled blade.

      It depends on your knife many Japanese double beveled knifes are sharpened on a 70/30 or 80/20 bias.

      He's essentially touching up his edge. Not re profiling it. Could be because he's better at a motion on one side or just prefers it.

      Indeed, apparently he was flat on the bevel one side (sort of scandi grind) and flat on the side the other.

    I have known many Japanese chefs in my life. None of them will tell me where to buy a knife. You'll have to figure that shit out on your own.

    As someone who is 34 and has about 21 years of knife skills: A good knife can allow you to work to your full potential but it can't make you any better. The *only* way to develop knife skills is by doing and doing again and again. Chefs can't even agree on technique, use what works best for you.

      The ones he pulls from the covers/sheath look like nenox/nenohi knives which are around 900 bucks give or take. The ones he uses that have his name are probably custom.

      This is just a learning technique. He doesn't do that normally. It's how I learned freehand sharpen to shaving sharp.
