If you haven't tried it already you should try substituting that mayo with ether plain Greek yogurt or sour cream, make for the most tender chicken you will ever eat. The enzymes in the yogurt break down some of the protein structures in the chicken and mmmm so good

    • @HardwareLust

I tried this both ways yesterday, and the plain Greek yogurt won, hands down. The mayo wasn't bad, but the yogurt gave them such a rich, tangy flavor it was no contest.

Absolutely amazing. His mayo mix is a little deceiving. I had to use a lot more hot sauce to get it warm (not hot, just warm flavor) other than that this recipe is complete fire. Great job on this.

I’m Salvadoran and I keep pickled onions in my fridge all the time, but why do you add sugar and heat/boil the mix?
I do them differently: I use lots of lime juice, instead of vinegar, and just a little water to dilute the juice a bit. I also add a local variety of tiny hot peppers, called chiltepes, which I crush a lot, and some salt. I put everything in a jar and let the lime juice pickle the onions. They are ready to eat in an hour or two, but get tastier in a day or two, when the onions are fully pickled and the hot peppers have yielded their flavor.

I would use a Knorr chicken cube seasoning paste as the marinade. No Marco schit.

This is how I pickle my unions: in a sauce pan I pour 2 parts water, 1 part vinegar, 1 part salt, 1/2 part sugar, 1 raw garlic and 5-10 pepper corns. Bring that to a boil and the I'll pour the liquid over the onions. Sometimes I mix onions and habanero. Btw I don't have exact measurements because it depends on the amount of onions.

The best chicken sandwich I ever had was quite similar to this, but the cheese is brie and there's a really garlicky pesto aoli

Great sandwich. I put the cheese on the chicken so it gets melty and the tomatoes won’t slide around.

I do not approve of the use of the outer layer of the moldy onion.

    • @4.0.4

I always discard the outer layer, despite being conscious with food waste otherwise.

Great video, the Mayo tip is a good one. But, it is a crime against culinary humanity to create a grilled protein sandwich on a toasted bun and then just on a slice of cold cheese. Melt it on the thigh for the sake of humanity.
