What I find most intriguing is that in many of your recipes the methodology is pretty much the same but in adding a small amount of different paste or spice you completely change the taste of the entire dish. That is what I find most remarkable and satisfying about your recipes. I am not a stickler of recipes but in your case I follow them religiously and each and every time time I am blown away by the tastes I never imagined curries could conjure. Thank you.
