Good question. Curry powdered is a masala (blend of of different spices). This bend of spices differs based on what type of “curry” you are making. The blend of turmeric, Kashmiri chilli or cayenne pepper, and coriander powder, plus the fried whole spices of star anise, cinnamon sticks, and whole cardamom for a flavour profile for this specific curry dish. Some people purchase a curry powder from a store, but when you look at the ingredients, you’ll notice a blend of different spices, also called a masala in India. I hope this helps.
For 1 kg chicken, double all the ingredients other than the whole spices/garam masala. Use 1.5 times for these ..eg for green cardamom, 3 are used in this, instead of 6 add 4-5 for 1 kg 😊
I had used 5 tbsp readymade tomato purée. 1. You can either use that or readymade tomato paste available in stores OR 2. Blend 2 medium red tomatoes 🍅 and use that.
This woud pair beautifully with Neer dosa or Appam....

Looks great but what about the whole spices put in at the start, imagine biting into one of them it’d be awful.
That's why you have eyes to see and take them out.

This is quite normal for indian food. If you ever accidentally bite into one you tough it out and move on.
