    NAAN CHANP
    Ingredients
    Coarsely minced meat ½ kg
    Ginger garlic paste 1 tbsp heaped
    Green chilies 4 julienne
    Potatoes 2
    Whole cumin 1 ½ tsp
    Salt 1 ½ tsp
    Oil ½ cup
    Clarified butter ½ cup
    Button red chilies grounded 8
    Whole spices mixed 1 tbsp
    Crushed coriander 1 ½ tbsp
    Lemon juice 2 tbsp
    Roasted and crushed coriander 1 tbsp
    Roasted and crushed cumin 1 tbsp
    Allspice ½ tsp
    Coriander leaves 2 tbsp
    METHOD
    Marinate mince with grounded ginger garlic and grounded button red chilies, coarsely crush the coriander and cumin seeds, cut the potato into small cubes, fry and keep aside. Heat clarified butter, add all spice, add mince and salt, fry on slow flame, cook till almost done and dry, add roasted and crushed coriander, cumin, allspice and green chilies, fry well, add lemon juice, fry well until done and serve garnished with chopped hara masala.

    VEGETABLE AND CHEESE FOCACCIA
    Ingredients
    Water 1 cup
    Olive oil ¼ tsp
    Sugar 4 tsp
    Oregano 1 ½ tsp
    Salt 1 tsp
    Flour 3 ¼ cup
    Yeast 1 ½ tsp
    Ingredients for Topping
    Olive oil 1 tbsp
    Dried basil 1 tsp
    Tomatoes 2 thinly sliced
    Onion 1 thinly sliced
    Salt ¼ tsp
    Pepper ¼ tsp
    Mozzarella cheese 1 cup
    Parmesan cheese ½ cup
    Sweet corn ½ cup
    Mushrooms ½ cup
    METHOD
    In a bowl, put together the first seven ingredients and knead for 5 mins, remove dough onto a lightly floured surface, punch the roll down, roll into 13x9 inch rectangular dish, transfer to baking dish coating with oil.
    FOR TOPPING
    Brush dough with olive oil, sprinkle with basil, layer with tomatoes, onion, sweet corn, mushrooms, sprinkle with salt, pepper, parmesan cheese, cover and let it rise in a warm place until double about 30 mins, bake on 180 D for 20 mins, sprinkle with mozzarella cheese, bake for another 10 mins longer until golden and cheese has melted.

    RESHMI KABAB ZAFRANI
    Ingredients
    Chicken mince ½ kg
    Egg 1 beaten
    Roasted and crushed cumin 1 tsp
    Black pepper 1 tsp
    White pepper ½ tsp
    Salt 1 tsp
    Cashew nuts ground 10
    Ginger garlic paste 1 tbsp
    Onion ground 2 tbsp
    Allspice ½ tsp
    Saffron a pinch Milk 1 tsp
    Coriander leaves chopped 2 tbsp
    Cottage cheese grated ½ cup
    Wooden skewers as required
    Oil for brushing
    METHOD
    Put all the ingredients together in a chopper, grind well. Put them on the skewers and grill in oven, keep brushing them with oil till golden, remove from skewers and serve hot with raita and salad.
