because if your barista is dialed in on the service grinder, you don't want a new barista tinkering with it let alone dispensing beans from the set grind. for folks who haven't worked in an actual cafe, there is such a thing called "work flow". work flow involves the manner in which a barista will attack the orders currently coming in through the POS (point of service). just like a good line cook, a good barista will not only serve dialed in espresso that tastes great on its own, but a great barista will be able to serve all of the drinks that are ordered under a specific set amount of time while keeping their work area clean and neat. when you are busy during service (ie for high volume cafes, this can be 2-3 drinks per group head per minute. any respectable, high volume cafe will always have a specific training bar area for new baristas to train on. you just cannot ask a new barista to hop on bar and handle a weekend volume rush unless they have done it for a long time (takes a solid 6 months bare minimum for a brand new barista to be able to crush a high volume day).

Manual Brew some Espresso machine can be afforded from 150$ nowadays, u can search it up online. for manual brewing there's plenty of choice with different prices (V60 is the cheapest, and the hardest (?)): - V60 Dripper - Vietnam Drip - French Press - Syphon - Aeropress - etc For me personally i got V60, French Press and Syphon for my daily use tho, i dont buy Espresso machine because its not necessary for me (because im not owning a cafe and im not into latte).

카페레이서 추출할때 자주 에스프레소 양 변동 되나요 ? 저도 레이서 사용하는데 1번은 42g 50g 62g 67g나와서.. ㅠㅠ 전 48g으로 메크로잡아뒀는데 ㅠㅠㅠ
