    ►SINGAPORE TRAVEL GUIDE: migrationology....
    The best Singapore food blog is run by Dr. Leslie Tay (ieatishootipost...) and back in 2010 he conducted a survey asking people about what they though was the best or their favorite hawker food center in Singapore. Old Airport Road Food Centre won by a significant margin, so it’s quite safe to say this hawker centre is among the best and one of the local favorites in the city. I think it’s such a great place to eat in Singapore mainly because it’s big, it’s spacious, there’s a huge selection of different things to eat, and since it’s one of the oldest hawker centers in Singapore, it’s also home to some legendary food stalls.
    Whitley Road Big Prawn Mee - Ying decided to first order a bowl of prawn mee (prawn noodles) from Whitley Road Big Prawn Mee - the main reason we went here is because the stall was continually busy with plenty of customers, and both of us love to eat shrimp. The yellow noodles came topped with some tangly prawns and doused in a salty shrimp tasting sauce with soup on the side. The dish was good, but a little on the salty side.
    Nam Sing Hokkien Fried Mee - Probably one of the most famous Singapore food stalls at this centre is Nam Sing Hokkien Fried Mee, known for serving a popular version of fried hokkien mee noodles. The mix of both yellow and white rice noodles was mixed with prawns and squid and then blended in a special sauce. It wasn’t a fried dry noodles, but it wasn’t overly sauce, but it was somewhere in between. I quite liked it, especially with a squeeze of calamansi and some of the chili soy sauce on it.
    Toa Payoh Rojak - Along with the fried Hokkien mee stall, this place for rojak is another one of the most famous places to eat at this centre. As soon as Toa Payoh Rojak opens for the day, they have a continuous long line of customers, and they specialize in serving Chinese style rojak - a mix of different things all coated in a sweet shrimp paste glaze. It’s one of those dishes that somewhere halfway in between a dessert and a savory snack, and when you’re eating it, you really don’t know. The Chinese rojak was quite good, with a very pleasant balance taste.
    Wang Wang Crispy Curry Puffs - Finally, for my last thing to eat at Old Airport Road Food Centre I really wanted to try some curry puffs. The curry puffs were actually much better than I had anticipated, with incredibly flaky crust, and filled with a flavorful inside of curried potatoes. Amazing especially because they were fried so fresh.

    Mark, your food selections have honestly changed my diet for the better. I don"t use wheat noodles-just rice or Jasmine rice- no MSG or regular salt. Occasionally I use iodized Himalaya or sea salts I'll use Mrs. Braggs aminos( no salt but strong) in place of shoyu, and vinegar- her vinegar-strong as well. Mrs. Braggs kelp sprinkles with sea weed, lemons, limes, white or black peppercorn. Ponzu and plumb vinegar changes the profile to my liking as does a lo salt fish sauce. 20 lbs down and counting- cut my diuretics in half!!! Keep up the great work!!
    Thanks!!

    Mark, The next time you and Ying are in Singapore go to the Bugis Center Food Court and try the Claypot with chicken (or whatever) it is cooked rice in a clay pot - sauce and chicken are scooped into a pool made into the middle of the rice and as it cooks the flavor goes out into the rice. On the outside of the pot the rice becomes crusty and so full of flavor. It is great. Of course you eat it with sambal, Malaysians and Indonesians eat sambal with everything.

    Fruit rojak consists typically of cucumber, pineapple, benkoang (jicama), bean sprouts, taupok (puffy, deep-fried tofu) and youtiao (cut-up Chinese-style fritters). Raw mangos and green apples are less commonly used. The dressing is made up of water, belacan (shrimp paste), sugar, chili, and lime juice. Ingredients vary among vendors with some also using hae ko prawn/shrimp paste, tamarind or black bean paste in the mix. The ingredients are cut into bite-sized portions and tossed in a bowl with the dressing and topped with chopped peanuts and a dash of ground or finely chopped bunga kantan (pink ginger bud).

    that unknown ingredient in rojak is called the mexican turnip or "sengkuang" in malay. it is a root which is juicy, sweet and crunch. that turnip is commonly used in making spring rolls called popiah.
    you can call the chinese doughnut as you char kuey or youtiao.

    Hey Mark, I'm seriously curious to see this but will you do a video of you trying the popular Korean fire noodles? Your tolerance to spiciness amazes me and I wonder if the noodles got anything on you or will it be something you can just gulp down like it's nothing. Can you please do a video of it? Would love to see your view on it. When I watch other youtubers try it, it's hard to tell the level of spiciness but because I see how you eat those bird eye chili peppers, I know how your level of spice is.

    Mark any chance you can get someone to give you a tour of one of those stands? I am wondering how big they actually are and if they utilize a shared space with other vendors for cooking and prepping food or if they are all separate units. What a great cost effective way to sell food. I like that they seem so compact.

    • @littlebluedolphin
      @littlebluedolphin 8 ปีที่แล้ว

      The hawker stall units are pretty small and compact, size wise, most units have an area is of approximately a King sized bed. Each unit is rented out to a different food vendor, though some vendors may rent 2 side-by-side units if their businesses needed the space/facilities. Most units are equipped with/can fit a stove, fridge, sink and serving counter in front. Hawker centres do utilise space very efficiently, and it's also a space which many hawkers/vendors run their businesses in, while diners have a common space to order and sit down to enjoy different dishes from multiple stalls, so it gives diners plenty of food choices.

    Hey Mark, love your videos! I've been watching for a few years now. When are you going to make it to Indonesia? There are many great food options, so I am wondering why you and your wife have not been yet, especially as it is so close to where you live. Keep uploading great videos!

    When did you go? You missed out on the Lor Mee. The queue for that is usually so long it might be an hour before you get your noodles. If you ever come back, try and find the Lor Mee stall. Its on the other side of the food centre. (Xin Mei Xiang Lor Mee). Its open from 9:30 to 15:00, except on Thursday.
