I had much rather have icebox fruitcake that I had the regular fruit cake because the regular is dryer and I had much rather had the icebox one. In fact I’m getting ready to make some for gifts myself and it is expensive no doubt I’m glad somebody else likes it like myself.
It sure is expensive. The candied pineapples for just two small one were $5.99 and I didn't buy any this year. Got some from last year in the freezer. So if you find them cheaper where you live, it would be good to stock up. I don't care for regular fruit cake either. My children and grandchildren love the icebox fruitcake too. My mom put coconut and raisins in her's but I don't like it in mine.

I love this version of an Ice Box Fruit cake. Its pretty close to same version my granny made from the south. The only difference is she added shredded coconut.. There are many versions but this one is pretty close.

My recipe calls for 1/2 coconut and 1/2 cup raisins. I just don't care for them in mine.
