I remember your smokehouse videos were my first ones of yours I watched. I still think that design is awesome and if I ever build one, it will be like that. That bacon is absolutely beautiful! I have brined pork roast with just Himalayan Pink Salt and it turned out great. Nitrites are NOT necessary for curing or preserving. It is -10 here this morning and it will not get above zero today. I Was out in the cold building my next big greenhouse just yesterday and my neighbor across the way started up his Smokehouse and about a hour after he started it i could smell the ham warming up and i thought i died and went to the Lord because it smelled so good. BTW Ya'll wouldn't be interested in adopting a 63 year old farm hand would you?....lol. Oh and don't forget to sprinkle a little sugar over the bacon when it's almost done cooking.

I can remember my grandparents making bacon and hams and they never used nitrates he packed that ham and salt box then smoke it same with the bacon and then wrap them hams up in newspapers and hang them and next year grandma would cook them hams up in the wood stove

For the floor of your smoker, consider getting a couple aluminum cookie sheets from Costco or Sam's Club to catch the grease. Prevents it from soaking into the concrete. Have you ever made buckboard bacon? Thanks for the video. Jon
The only thing missing is the black rubber stamp that says bacon on the butcher paper. Years ago our butcher would do it exactly like Mrs Wanda and would stamp what ever was inside bacon sausage chops roast etc. Good memories
That's a good video and you're right if you plan ahead of time you can schedule everything out just perfect and that bacon look really good. The way y'all cook that bacon at that makes the perfect BLT sandwich.

In Australia, bacon is made from the entire belly and loin. The 'crackling' is left on and a slice of bacon is probably 18" long. It is also cut 'thick' and not cooked to a crisp. Unfortunately, it's usually far too salty.
When I was young my family would kill pigs in the fall (1960's). I remember thinking I was grown when I finally got to measure the spices for the sausage and didn't just have to grind. Lol. My grandparents had a smoke house and folks would come from town and buy their "extra" smoked meat. Big gardens - raised own meat cows and had dairy cows. Good times.

Soak it in warm water before cooking and the salty taste goes away.
