  • #1 Garlicy beef shish kebab
    1kg sirloin
    Marinade:
    - Roughly chop 2 heads of garlic
    - Juice of two fresh lime
    - Crushed black pepper
    - 1/4 olive oil
    - 1/4 sparkling water
    - 2 tbsp salt
    Mix in ziplock and refrigerate overnight
    #2 Onion soaked beef shish kebab
    1kg sirloin
    Marinade:
    - Onion juice. Blend 2 roughly chopped yellow onions with a splash of sparkling water. Use a strainer to gather onion juice
    - 2 tbsp olive oil
    - 1 tsp black pepper
    - 1 tbsp dry coriander
    - 1 tbsp cumin
    - 2 tbsp salt
    - 1 tsp dry parsley
    - 1 tsp dry dill
    Mix in ziplock and refrigerate overnight
    #3 Asian style chicken shish kebab
    - Roughly chopped 4 inch fresh ginger root
    - Roughly chopped 6 garlic cloves
    - Juice half lemon
    - 1 tbsp of honey
    - 1/2 cup soya sauce
    - 1/3 cup oyster sauce
    - 2 tbsp olive oil
    - 2 tsp Five spices
    - 1 tsp white pepper
    Mix in ziplock and refrigerate overnight
    Directions
    Assemble #1 style
    Order: meat, onion, bell pepper
    Assemble #2 style
    Order: meat, onion, zucchini/eggplant
    Assemble #3 style
    Order: meat, mushroom
    Grill on Napoleon skewer set
    Grill temp 400F
    Cooking time 10-15 min
    Fries
    Cut peeled russet potatoes into fries
    Soak in cold water for 30 min
    Dry well
    Salt to taste
    Add splash of olive oil
    Directions
    Grill in Napoleon basket
    Grill temp 400F
    Cooking time 1 hour
