@@jimliu2560 depends on the Gadget, how u use it & how accesable it is. I personally have a mandoline at home (not the one from the video, way simpler) but the knife is accessable enough that I can sharpen it whenever it gets dull with something that would go trough the machine or built it out and replace it/sharpen it as I do my knifes. High quality Gadget should offer that option. However I also know some Gadgets that people had for 6-7 years and they worked still very good

Knives, on the other hand, are Jacks-of-all-trades, master-of-none sorta things. They will work in just about any situation, but not with the speed and efficiency of a master.

Also depend on what you're cleaning, you can use scissors, and for cleaning fruit skin you can use peeler which is safer than knife, or if you really must use a knife at least you won't have to use the knife for much longer time = much more safer and lower probability of dropping knife.
Also this is from my experience and if you are healthy and can use knife pretty well then sure knife is a GREAT tools, very versatile! But some of these inventions are very helpful in my daily life

It might be simple and take up a lot of space, but my favorite one is the tomato slicer we use at work. It’s kinda bulky, but all you have to do is set them down on the slicer, and push them through the blades. Can be a little messy to, but it’s quick, easy, and honestly, just fun to use. Would be hard to clean without the high pressure sprayer we have for the sink though.

She had a stroke many years ago and it affected the flexibility of her hands and joints so she can't have the same finesse she had when she was younger in handling knives. But she happily told me this decade were the best years she had experienced while cooking people keep coming up with ways to make her life more simpler and easier in ways she didn't even know was possible. The only downside is you need to dedicate permanent space for a 40 pound machine.

I have crazy good knife skills, so that's my go to. Especially for the space savings. For garlic, put the blade on its side and give it a smasharoo before mincing it. For fancy potatoes, cut a strip on the flattest side so it will lay flat. Take those skewers and lay them along the potato to keep the knife from going all the way through and thin slice them. Season them while fanning them out, then spray with oil and bake. I do own and use one of the chop boxes for cutting everything up to make huge batches of potato bacon soup just because it's easier.

Many of these gadgets allow the home cook to slice, dice, and julienne like a pro without years of practice to make perfect cubes and equidistant slices. When chefs say their dish is rustic, that is code for "I made a real mess of cutting my vegetables with a knife.

I have one of those apple slicer corer and peelers. I have a friend with an apple tree and she gives me a giant bag of apples every year, usually about 25. I make dehydrated apple rings out of them, and that slicer corer and peeler is an absolute necessity. Once you get good at using it, you can have 20 apples turned into a huge stack of perfect apple rings ready for the dehydrator in about 10-15 mins. Doing it by hand, it takes forever and the rings dont end up perfect and uniform thickness.

12:13 instead of chopping them like that, you can use a common technique called crushing the garlic with a proper kitchen or butcher knife, it won't give you nice clean cubes but its very fast, easy, and safe.

Make sure you are not using that tiny knife in the video, you need one thats 2/3 of your hand.

With the spiraling and the potatoes though you can leave them on the skewer with the knife and fry them.

I keep missing my favorite onion cutting helper. It looks like a steel comb with fairly long, pointy spikes. Punch those through each half onion and cut along each spike. The kicker is the last step, cutting across: No unwieldly disintegration of those pre cut slices anymore 😂

I actually have the garlic 🧄 mincer/slicer. Super convenient and easy to clean. It also doesn't transfer garlic to a cutting board. I give it 10stars!!!!

All cutting edges will dull down, but simple knives are much easier to sharpen again.
