In my personal experience if u add salt at the end of fermentation in leads to loss if aeration of batter and the dhokla or idli won't rice. Even I add it during grinding the batter.

Great recipe..Please clear a doubt of mine...You have added turmeric to the batter the night before...Next day, when you add soda, will the mixture not have red clots?? This happens with my batter..The dhoklas that come out thus have what look like blood spots..It is so gross and revolting to see that almost always I discard these dhoklas..If I do not add turmeric, then the colour of the dhoklas does not look vibrant..Anyone else facing this issue?? How do you resolve it??

No need to add soda when the mixture is already fermented. Soda is added for fermentation .
