Can it be kept in the freezer? How long can it last if it's being kept in the freezer? My friend suggested I finish off within days as he said that the scallion might rot. I have just prepared it today but yet to taste it.
Hi L.S. Yew. Yes it can be kept in the fridge or freezer. The last time I made this and kept in the fridge for about 6 weeks. Yes, your friend was right, the scallion can go bad easily if it is raw. However, if you wish to cook and keep it, I would recommend to make sure that the scallion is cook properly for at least 2 minutes with the ginger. I hope this helps. Happy cooking 😊

I usually cook this with the claypot chicken rice ( th-cam.com/video/IavcjJcqkSE/w-d-xo.html ) For chicken rice I usually serve this sauce as the condiments ( th-cam.com/video/KAHW9Gw49EI/w-d-xo.html ) As for the soup, I don't recommend to add the ginger scallion sauce as it contain cooking oil and it can cause the soup become very oily and not very appetizing. Make sure to use a clean, dry spoon to scoop the desired amount from the container when consuming. Also to note, that usually by 2 weeks, the colour may fade a little (turn a little grey) - however it is still good. Hope it helps 😃
Hi Huiting Lee. No need, just warm will do. If oil is too hot it will create a hot oil splashing when putting as the blended ginger contain a bit of water. 😀
I think this version of ginger scallion they have made is it a bit more involved than the most basic and traditional version which is literally just chopping up gingers and scallions into small bits, adding salt atop them, and then pouring heated oil over them and mixing together

I would recommend consuming it within 2 weeks, however, as it's best to have it fresh before discoloration occurs. That's lovely. I agree, it goes so well with many Chinese dishes, like steamed chicken, steamed fish and also with clay pot chicken rice. :)
The fastest way to remove the ginger skin is scrap it using spoon.
