Hello everybody ! I just tried this recipe and I RECOMMEND IT. I made it in a very (very) small amount (not enough for a drink). I wanted to see if it works. I followed the recipe exactly (except for the dye, I don't have one). I had no problem until the kneading. The dough was dry and did not want to form a ball. So I added a little bit of water (something like 2 or 3 drops) and I was able to form the ball (the water must have evaporated during cooking). I then formed balls (by dipping very slightly in water if it did not want to form). I cooked it, then add sugar as advised. It was perfect. Except for the color, the balls remained very clear.
PS: I used 1 tbsp of tapioca starch, 1 tsp of water and 1/2 tsp + 1/4 tsp of brown sugar
PS 2: if you have red, yellow and blue food coloring, you can use (the same amount of each) to make black. I thought about it too late
    (I use google translation)

    **Read Before you make**
So I decided it would be really fun to do this and it worked out great however I just have a few tips :)
I made some rainbow boba using this recipe it worked great but I made the bobas a little to big so they didn't cook evenly
another tip I have is that you want to half the recipe depending on how much boba you want...I made this recipe knowing I would have left overs as I was only making a cup for myself however and I'm not sure if you would have the same results if you refrigerated but my boba molded within a few days and I had to throw it out.
Any way just a few tips.. Hope you enjoyed :)

I tried this recipe out. Here is my honest review-
It was the only boba recipe on youtube I could find that did not burn when I poured the tapioca starch in. It immediately became a thick gooey substance, which was later made into the perfect dough.
I assume all boba dough gets crusty while rolling the balls, but I was pleasantly surprised that this did not affect the way the boba cooked.
I could easily cut the dough, and it was even easier to roll into balls.
I decided to make two batches, one with black color, and one without, because I wanted to save the black coloring to make some more later. The one without coloring just looked liked big pieces of brown sugar, which was expected, because boba is naturally translucent without coloring.
After an easy cooking process, I strained the boba from the water. The water looked and smelled like well- crap.
The boba looked really dry, not at all like what this person strained from the water. It didn't look sticky, it just looked like brown pasta.
When the time came to finally taste it, It looked like something you would get from a cafe. But oh hell. It didn't taste very good. It tasted the way the pasta water smelled. But kind of almost... worse.
It was however a boba texture. It was perfectly chewy and soft. I wouldn't say it was a smooth ball, it was a little bumpy. But I still loved how chewy it was. It was a treat for a dweeb with braces.
In the end, I liked the process of making it more than tasting it. I will try the recipe again sometime to see what I might have done wrong. The video itself was very informal, so I could easily follow along. Thanks for coming to my TED Talk.

    • @pigeon1923
      @pigeon1923 3 ปีที่แล้ว +45

Ah, I see the problem here. Similar to how plain pasta tastes...well like plain pasta, you would normally add a sauce to it for it to taste good. You have to do the same thing here. You need to make simple syrup to give it that sweet, delicious unmistakable boba taste! Unfortunately this person didn't show how to make it in the video but it's rather simple and not very time consuming.
      _Recipe:_
~ Add a cup of brown sugar and a cup of water into a pan, put on medium heat and boil it for about 5-10 minutes until it's at your desired thickness.
~Afterwards, wait for the mixture to cool down enough that it's still rather warm and not like molten lava, transfer into a heatproof bowl or cup large enough.
~Add your freshly cooked boba into the syrup, mix and let it absorb that sticky goodness for at least an hour.
      ~ Enjoy your boba!
      _Notes:_
You can even use some of the left over starchy water as it makes the syrup more thicker but it's optional.
The longer you let your boba sit in the syrup, the better they taste. You can keep the boba refrigerated for about 4 days, so you could actually make it overnight and then enjoy the next day.
If your boba has gone a little firm or tough in the fridge, you can microwave it up in 30 second intervals. Keep an eye on it and make sure the syrup doesn't bubble up. Let it cool down before tasting one to see if it's chewy again.
      Hope this helps you out!

Hi, I am a barista and this is a great recipe, though I have some tips:
    1. To cook it perfectly, boil 6 liters of water for 1kg of pearls, wait for the water to boil then add the balls, boil it for 25 minutes
then turn of the fire and let it sit for another 25 minutes, DON'T OPEN THE LID. After that wash the pearls with tap water.
    2. Create a sugar mixture, in 1 kg of pearls use 200 grams of brown sugar and melt/dissolve it in a 120 ml of water. Then mix it with the pearls and enjoy.
    I hope it works

I followed this recipe recently and found that the dough was dry and crumbly and didn't have the playdoh-y consistency that it had in the video. I suspect I let the pan get too hot and too much of the water evaporated or something. I ended up adding more water as I kneaded the dough. Ultimately I think my dough was still a bit too dry after that and I had to boil it for a lot longer than the directions said. Even after boiling an extra 30 minutes it didn't seem to get completely clear in the center. I gave up and used them as they were. The end was still pretty dang good for my first try, I'd give my boba 3.5 stars. My family really liked them. They were passable but definitely could've been better.

I had great success with this recipe today, after trying another one that was a flop. I did make my boba too big, so they didn't cook all the way through. I'd recommend taking one out to test how done they are before you turn off the stove to let them sit. I am storing my cooked boba in brown rice syrup (it's not too sweet) so they can hang around in the fridge for a week or so. For the coloring, I used 4 capsules of activated charcoal, and it worked great! Black as night and no flavor was added from it.
