Custom combo is a combo that is not what usually the character does comboing, and they mostly come from improvisation. Half of this compilation is not actually a custom combo btw.

It's more about how they string together different combo pieces in the moment and, in most cases, use the stage and their positioning thereon to do so. The steves are actually probably the most custom combos in the video as his combo game is so deep that you can just switch up on the fly at almost any point what routes you're taking or what finisher you're going for. You have a bit more of a point with greninja but I still think it counts because of the way he confirmed into the up air on the fly, which you seem to be ignoring.
