Ingredients and Measurements:
To season the chicken:
2 lb. chopped and washed chicken
1 tsp. black pepper
2 tsp. onion flakes
2 tsp. garlic powder
2 tbsp. green seasoning
2 tsp. dried parsley
2 tsp. Guyanese thyme
To make the duff/dumplings:
2 cups all purpose flour
1/2 tbsp. baking powder
1 tsp. salt
1.5 tsp. sugar (OPTIONAL)
1.5 tbsp. butter or oil
1/2 tsp black pepper (OPTIONAL)
To make the soup:
oil to cook
2 tbsp. brown sugar
seasoned chicken (see above)
6-8 cloves garlic chopped
2 pimento peppers chopped
3 wiri wiri peppers
6 stalks of culantro
2 carrots chopped
3 stalks celery chopped
1 large onion chopped
water to cover ingredients and fill the pot
6-8 pieces of cassava (1 large cassava)
2 plantains
1/2 cup chopped butternut squash
2 tsp. dried parsley
2 tsp. Tajin chili lime seasoning
2 tsp. garlic powder
1 cup macaroni noodles (any pasta)
2 cups baby spinach
10 okras (stems cut off)
duff/dumplings (see above)
