    Red Velvet Cupcake Recipe
    Makes 24 cupcakes
    Ingredients:
    Cupcakes:
    500ml buttermilk
    3/4 cup vegetable oil
    3 large eggs
    1 tsp vanilla extract
    2 tbs red liquid food dye
    1 tsp vinegar
    400g cake flour
    2 tbs cocoa powder
    2 tsp baking powder
    1 tsp bicarbonate of soda
    1/2 tsp salt
    320g caster sugar
    Cream Cheese Frosting:
    250g unsalted butter
    250g cream cheese block (non spreadable)
    1 tsp vanilla extract
    1 cup milk powder
    2 cups powdered sugar
    Method:
    1. Pre heat fan forced oven to 120C
    2. Line 2 cupcake trays with cupcake liners. Set aside
    3. Add buttermilk, oil, eggs, vanilla extract, red liquid food dye and white vinegar to a jug or mixing bowl
    4. Use a whisk to mix until combined. Set aside
    5. Add cake flour, cocoa powder, baking powder, bicarbonate of soda, salt and caster sugar to a large bowl
    6. Whisk together until combined
    7. Add wet ingredients to the dry ingredients
    8. Whisk together until you can’t see any more dry ingredients
    9. Fill cupcake liners 3/4 of the way with cupcake batter
    10. Bake for 30-35 minutes or until an inserted skewer comes out clean
    11. Transfer cupcakes to a cooling rack to cool down fully
    12. For the frosting add the cream cheese and unsalted butter to a large bowl
    13. Use a hand mixer to mix on high speed for 2 minutes
    14. Sift in powdered sugar
    15. Add milk powder and vanilla extract
    16. Mix on low until speed until the dry ingredients are incorporated
    17. Turn the speed up to high and mix for 5 minutes
    18. Use a spatula to scrape down the sides of the bowl
    19. Mix with electric mixer for another 2 minutes
    20. Transfer frosting to a piping bag fitted with a large round piping tip
    21. When the cupcakes have fully cooled down pipe a dollop of frosting onto each cupcake
    These are ready to enjoy!!
    Store the cupcakes in the fridge so the frosting doesn’t go off and doesn’t melt
