I am italian and this made me so happy. Happy that you gave a chance to the REAL food here, anything fancy, just lovely, simple, flavorful food. I don't live in the city, i live in Lunigiana, North of Tuscany, and the mushrooms we have here are stunning, porcini are just out of this world here. You should definitely come and lots of people will be very happy to show you our beautiful woods!! :-)

***** Australia is the quite the underwhelmed lace as well. Very nice coastal homes, and happy urban centers. Yet people do not take the time to really look past the harsh wild lands and the variety of bugs and insects. It is a very nice thing you are doing showing people the true beauty of Italy.

This really sparked 'n' helped me in how to make cantrells (if that's how ya spell it) I was thinkin' of boilin' it with red lentils, but not now :) . Thank you :) .

Never boiled them. Only cleaned them with kitchen roll and eventually a knife. I ate raw porcini picked on the same day, didn't boil them just cleaned as above. Still alive. If you boil them they lose their flavour.
graham m true indeed, let's give credit to the truffle-dogs because they do most of the work! In the past we used pigs in Italy for this purpose, they can even be more efficient: the only problem? try to tell them to not eat the truffle after they find it :)

the most truffle oils are just crap. They are fooling the costumers like hell. Even with the truffles you get, there are rarely good ones.
