- After years of obsessing over the perfect Mai Tai, Kevin Crossman finally unveiled his 'ultimate' Mai Tai recipe in 2019. But does it really live up to the hype? There's only one way to find out!

To make the cocktails in this video:
The Ultimate Mai Tai
1 oz fresh lime juice
1/2 oz Latitude 29 orgeat
1/2 oz orange curacao
1/4 oz Demerara syrup
1/2 oz Appleton 12 Rum
1/2 oz Smith and Cross Rum
1/2 oz Plantation OFTD Rum
1/2 oz Plantation Xaymaca Rum
Shake with crushed ice and pour into a double old-fashioned glass. Fill with more crushed ice and then garnish with a spent lime shell and a mint spring.

Kevin's recipe is terrific. It inspired me to find my own favorite: 1oz Hamilton Pot Still Black + 1/2 oz Appleton 12 year + 1/2 oz Rhum Clement VSOP. Eventually, I also subbed out the Curacao for Hamilton Petitie Canne Shrubb as well. It's funky, flavorful, and a bit grassy. #####

I love this. I've been drinking these since I first read about them in 2019. I actually pre-blend the rums in 1 liter batches. My only problem is Plantation Xaymaca is no longer sold in Ohio. I was lucky enough to get three bottles at the last call price of $17.99 each. My favorite rum blend is a 50/50 mix of Appleton 21 and Plantation 24 yr from Long Pond. I have not seen either in over 2 years, no matter, too expensive to use in cocktails.
I love that 21 year Appleton too! And yeah, it's not cheap.
A lot of the Plantation products are being run down at retail to try and sell everything out before the bottles with Planteray labels come out. Should be back soon. Your blend with Long Pond sounds great.

That's funnt because that's the exact rum blend I came to as welll! Great minds as they say.
I do the KC Ultimate Mai Tai Blend myself. I use Liber & Co Orgeat if I don’t have the Lat29 on hand. I also make a couple of other house varieties, but Kevin’s is always a winner. As I’ve noted, it’s ruined several commercial Mai Tais for my wife. #####

I’ve done a similar blend but swapped out the smith and cross for Ron Zacapa 23. Mellowed out the dryness of the xayamaca and added a little more oak and molasses. Top 3 favorite cocktail. Love that it is rum forward and perfectly balanced.
Got my first two bottles of Beeezeway Blend Friday! I left the last bottle on the shelf for the next Breezetonian who might happen by. I would have been bummed to see that slot on the shelf empty! Store owner said that the Breezeway Blend had been flying off the shelves and he would be ordering more when it becomes available again. I usually use Hamilton Jamaican Pot Still Black and Denizen. #####
I take Wray and Nephew unaged and then age it in a 1L barrel for 6-10 weeks. 2oz of this home aged W&N is the best rum blend I've found.

Tried the ultimate Mai Tai blend for the first time on Wednesday last week by chance. Big fan and it's definitely rum forward. Something I will definitely keep in the rotation when I want a bit of a stouter drink.
Greg Easter's Wray & Nephew 17-year Dagger Rum clone blend makes the best Mai Tai I've ever had, which makes it totally worth the two weeks it takes to create! The Ulitmate blend is definitely a close runner up, as is the Appleton 12/Rhum Clement VSOP combination! #####

I agree the Easter 17 year clone blend makes a great mai tai.
This particular rum blend has been my go to rum blend for mai tais and several other cocktails ever since I discovered it last year. I almost always have it blended in bulk in a separate bottle, so I don't have to do the half and a 1/2 and a 1/2. And a half thing. ####
I love to do an ounce each of smith & cross, and oftd, with a float of Hamilton 151 on the top. The sleepy time blend ####

I love mixing different rums and seeing how they change the drink. For ease and consistency, I mix 8 oz at a time, keep in a bottle, and Can be use it for Mai Tai, Three Dots and a Dash, Navy Grog- maybe even a Daiquiri for fun, or a Zombie. Here is my latest blend, 2 oz of each- Neisson Blanc, Neisson Eleve Sous Bois, Coruba Dark, and Smith & Cross. I like the slightly higher proof. ####

My favorite is pot still black and Coruba, but I lean harder on the Coruba for the split. Or a Denizen Coruba split but love the funk the Black brings #####
I was skeptical but doubling the S&C instead of using Xaymaca (the first barrels they made were different, better) & subbing Clement Creole Shrubb for the Curaçao it is an exceptional Mai-Tai!
My favorite blend is Smith & Cross + Goslings (50-50) and a splash of Plantation OFTD on top! Rich, funky and delicious! #####

About a year ago, I visited the Bamboo Room Tiki Bar in Savannah, GA. Fun place!!! I sat at the bar and told the bartender I wanted a smooth sipping rum that was more column still than pot still--I am not really a fan of the strong funkiness in so many pot still rums and I prefer the smooth, mellow flavor that a good column still can offer. The bartender recommended I try either the 15 or 17 year Panama-Pacific rum. I tried the 17-year over a large ice cube and it was delicious! When I got back home to Atlanta, I spent a little time trying to find a store that carried this intriguing rum, but no luck. Some time passed and I forgot about it for a while. Then, one day, I was at a non-descript neighborhood liquor store near my house and there they were... 3 or 4 different selections of Panama-Pacific. I grabbed one of each to stock my home bar. Since then, I have come up with what I call a "Pan-Pacific Mai Tai," using 1 ounce of the 3-Year Panama Pacific White Rum, and 1 ounce of the 15-Year Pan Pacific Gold Rum. It truly makes the smoothest Mai Tai I have ever had. Thank you, Bamboo Room, for introducing me to this great rum! Steve from Atlanta. #####

I've been loving blends that include a rhum Agricole in them.
My favorite rum blend that I use in a lot of tiki drinks is what I call my "house dark" blend: equal parts Dr. Bird, El Dorado 12, Plantation OFTD and Hamilton 86. It's aiming to be what I imagine the old Dagger Punch and Myers's 97 proof rums from back in the day tasted like. It's especially killer in a Planters Punch. Cheers! #####
For a quick and easy Mai Tai I'm a big fan of using 2 Oz of Denizens 8. For extra effort I really like the Utimate Mai Tai blend, and if I'm feeling spendy then I'll use 2oz of Hampden Great House (any year edition). #####
i do the Kevin Crossman blend, and add 1/4 oz of Rum Fire. Sometimes I make it with Creole Shrubb instead of the Pierre Ferrand. Just acquired the Trader Vic's mai tai glass last week. #####

I use 1oz of Xaymaca and 1oz of Wray and Nephew White Overproof. Keeps it simple and quick to make plus adds that extra little bit of funk I think the drink really needs.
Current favorite rum blend is Appleton Estate & Plantation/Planteray, so looks like I should try the Ultimate Mai Tai! #####
I've been experimenting with different bottled orgeats, so my orgeat has been rotating. I'm now excited to try that Beach Bum Berry's Orgeat!

Kohana kea is a great Hawaiian Agricole rum, picked up on a previous visit to Oahu. But I also love Kevin’s ultimate maitai blend and absolutely have a mixed bottle of that.

@@tommymatheson7519 absolutely, I know Agricoles in mai Tai’s are a contentious subject, but that 1/2 oz addition mixed with the Jamaicans is rather lovely. I wish we had access to some of the US brands - Hamilton and denizen have no distribution here in the UK so have to get what runs I can when I visit the USA.

I've tried many Rum blends in the '44 Mai Tai. Many of them have been very good, but I love Kevin's Ultimate blend so much that I keep a bottle of it premixed at all times. I'll continue to experiment, but currently, the Ultimate blend is my favorite. #####

Appleton's 12yr, lemon hart 1804 and LH151 has been my current but I've been making a hawian tia with a mix including blackpool to offset the OJ and pineapple #####

The Flor is delicious and has a great history and distillery location, Hamilton overproof is perfect to elevate, (and doesn't have the more intense funk that Smith & Cross has since my girlfriend isn't a fan) and I had Don Papa at Trader Vics my first time at one of the chains locations and fell in love with its sweet butterscotch/caramel taste.

Xamayca is a great option for a Mai Tai... it brings more of the Martinique flavor. My fav has to be what turned me onto the Mai Tai to begin with... Smith and Cross with La Favorite Rhum Vieux Agricole. ##### Of course, with homemade orange curaçao and orgeat!

My goto version of a mai tai uses Brugal 1888 as the main rum, and I top it with a floater of Kraken. I find lime overpowering, so only a half ounce. The secret for me, though, is the orgeat. I've used Liquid Alchemist's version for a while, but I just discovered Liber & Co orgeat, which is even richer. I have a mint garden, so the mint is fresh, but I also use a mint simple syrup with a turbinado sugar base. Messing around with the rum choices is fun, though. I'll have to try different combinations to see what comes up. #####
